Repost: WW recipe for Chicken "Fried" Rice

MMMMMMM So good!

Makes 4 servings...

1/2 Lb. Ground Skinless Chicken
1/4 c. low sodium chicken broth
1 TBSP. reduced sodium Teriyaki Sauce
1/2 tsp. ground coriander
2 tsp. peanut oil (I used olive oil)
2 larges eggs, lightly beaten
1 tsp. minced, peeled fresh ginger
2 carrots finely chopped
1 green bell pepper seeded and finely chopped (I substituted corn instead)
6 scallions sliced
1 1/2 cups cooked brown rice
1/2 c. thawed frozen green peas.

(Honestly, I just used a bag of mixed veggies, so much easier!)

1. Spray large non-stick pan with cooking spray, heat. Saute chicken until browned thoroughly. Transfer to medium bowl and stir in broth, Teriyaki sauce and coriander.

2. In the skillet, heat one tsp. of the oil. Stir-fry eggs until set, but still moist. Transfer to the bowl.

3. Heat remaining oil, saute the ginger, veggies and scallions until tender. Add rice, continue to stir fry until rice begins to brown (***I kept my rice soft because Ava was eating it), Add chicken mixture and heat through.

Serving size 1 1/2 cups, 6pts. on WW.

This is so good! I tried a modified version tonight based on what I had in the house!

I used chik'n strips (cute them up after I sauteed them), onions insteadof scallions and bagged veggies. I also left out the ginger.

It was SOOO amazing and really hit the spot. MMMMM
