Anyone have a good frittata recipe?
I'm hosting a mother's day brunch and I'd like to serve a frittata. ANyone have a good recipe they care to share?

The one I like is from Martha Stewart.com. It's a Potato and Onion Frittata. I like it because it uses egg whites and whole eggs, so it's lighter than a whole egg frittata.

I made an easy one on Easter. I used egg beaters, about 3 cups with 1/2 cup milk. I added spinach & mushrooms, which I sauted first in a bit of olive oil & garlic first. Then I folded in some feta cheese. It was sooo good and easy!
