Stuffed Flank Steak
WOW! This has to be my all time best concoction ever.
1 flank steak, beaten to tenderize 12 oz jar artichoke hearts 12 oz jar roasted peppers block feta cheese fresh spinach garlic
Put all the ingredients in the center of the steak, folding steak over to close it. Tie it shut with the ties you get on lamb and roasts. Place open side down (mine did not close all the way because I had so much stuff in it). Bake 350 for one hour. Slice about 1" thick.
I seved it with tomatoes that the tops were sliced off, slightly scoop out the insides. I put about 1-2 tbls (depending on the size of the tomato) pesto sauce and gorgonzola cheese. Baked for about 20-30 minutes until the cheese started to brown.
Holy goodness did I get rave compliments from the ILs and DH.

Seriously.... it's only been a few days since I made it and I so want to make it again. Kind of disappointed that I invited the IL's over that night. We had no leftovers.

Thanks for the inspiration. After reading this I did something very similar with a small pork roast. It was delicious.
