Need help with an on-line class

I'm taking a class on Diversity Education and have to come up with some lesson plans and need some ideas. I teach middle school foreign language, and this doesn't lend itself easily to diversity education.

Here is the assignment - any ideas would be extremely helpful, considering I don't have a clue as to where to start!

As a teacher, you have just been assigned to incorporate diversity education (in six separate lessons) to your class. Please develop six lesson plans (following the format below), each addressing an area of diversity. The lessons should each include a piece of literature (book, article, etc) that could be used with your class to teach the trait. Please choose (6) from the areas of diversity below: gender, sexual orientation, race, color, creed, national origin, religion, and handicap. Each plan should be 1/2-1 page.

Do you use Allez-Viens for your French classes? If you skim through the teacher edition you might be able to find something.

You can easily relate the lessons to the Cultural Understanding NYS Learning Standard.

I always read "It's ok to be different" by Todd Par to my students at the beginning of the year. I do not have a written lesson plan on the book, but you can definitely get something out of it.
