I have made Emeril's Garlic Lovers Pot Roast ... soo delicious!

1 boneless beef chuck roast (about 3 pounds)
10 cloves garlic, peeled and cut in 1/2 lengthwise
2 teaspoons salt
1/2 teaspoon ground black pepper
2 tablespoons vegetable oil
1 cup chopped onion
1 cup peeled and chopped carrots
1 cup chopped celery
2/3 cup water
Red wine, optional
Rice Pilaf, recipe follows

Using the tip of a sharp paring knife, make 20 evenly spaced small slits about 1 1/2 inches deep all over the pot roast. Using your fingers, insert the garlic cloves as deep into the slits as possible.
Season the roast on all sides with the salt and pepper.

In a Dutch oven, heat the oil over high heat. Add the oil and carefully add the meat. Sear the meat on all sides until very well browned, 4 to 6 minutes per side. Add the vegetables, carefully add the water and cover the pot. Reduce the heat to low to medium-low and cook until the roast is very tender, 3 to 3 1/2 hours, turning 2 or 3 times during the entire cooking time, adding a little more water, and wine if desired, as needed so that a little liquid always is on the bottom of the pan.

Transfer the meat to a platter and let rest 10 minutes. Slice or pull the meat apart into serving pieces and drizzle the pan juices over the top.

My recipe is similar to elbee but I dredge my roast in flour and then I brown all sides in oil. I use carrots, potatoes, onions. I cook it in the oven. I dont have a recipe per se but here it goes:

1 Boneless beef chuck roast (3 to 3 1/2lbs)
Salt
Ground black pepper
2 tablespoons vegetable oil
1 cup chopped onion
1 cup carrots or baby carrots
Potatoes
Flour for dredging
2/3 to 1/2 cup water

Preheat oven to 325

Season the roast on all sides with the salt and pepper and dredge in flour.

In a pan, heat the oil and add roast. Sear the meat on all sides until browned. Transfer roast to a roasting pan. Add the vegetables and add the water. Cover well with aluminum foil or an oven safe tight lid. Cook for about 3 to 3 1/2 hours. Meat will be very tender.

* If using New potatoes, add the potatoes during the last 30 minutes of cooking.

** You can also use this recipe with Crock pots or dutch ovens.

i do mine in the crock pot.. comes out sooo good! AND, it cooks while i'm at work Chat Icon
i just put the roast in the crockpot with some beef broth and a little bit of water, some onions, potatoes and carrots and a little pepper and whatever other spices you want to add... cook on low for 8 hours. sooo good!! Chat Icon

I make mine in the crock pot too

Amazing pot roast for Crockpot

1 3 lb rump or bottom round roast
1 can condensed beef broth (campbell's)
1-1/2 cups water
1 packet Lipton onion soup
1 4oz can sliced mushrooms (drained)
2 onions quartered
1/2 bag carrots (you may want to use the full bag - I don't eat them, just FH does)
1 lb red potatoes, cut in half

Put the roast in the Crockpot and cover with the mushrooms
In a bowl, mix the water, beef broth and onion soup mix; pour on top of the roast (make sure it's basically covered with liquid; if not, add some more water or you can add a beer, water and Worcestershire sauce mixture. just make sure it's a light beer/ale)
Add the potatoes and onions; cover and cook.

Add the carrots about an hour before it's done.

Cook on low 9-11 hours
Cook on high 5-6 hours
