This one is in a red sauce....DH LOVES it (I don't really eat it, but it smells GREAT)
8 sausages 1 can crushed tomatoes (big can) 1 large onion, chopped 1 red pepper sliced 1 green pepper, sliced 1/2 tsp pepper 1/2 tsp basil, 1/2 tsp red pepper flakes (or crushed red pepper) 1/2 tsp parsley salt to tast 1 clove garlic, crushed
Cook sausage until done, set aside (whichever way you prefer....I've done it in a skillet with a touch of water, my step mom showed me that you can bake them and broil them for a little to brown them up)
Cook peppers and onions with some olive oil. Add tomatoes, spices, garlic and cook for about 5 minutes.
Throw sausage back in (I slice the sausages up) and serve.

This is a Rachel Ray recipe that I made with Turkey Sausage (since we don't eat pork)
Eat well, eat more! I cut out the bun so I can have more dogs and veggies with less guilt. Chicago-style dogs are my favorites, with pickles, tomatoes, onions, mustard, and slaw on top; this salad reverses the order and piles the veggies up high underneath the dogs. 1/4 cup yellow mustard 2 tablespoons vinegar, eyeball it 1 rounded teaspoon sugar 4 tablespoons vegetable oil 1/2 medium red onion, thinly sliced 1/2 of a 16-ounce sack shredded cabbage blend for slaw salads 1 romaine heart, shredded 2 vine ripe tomatoes, diced 3 large half sour or garlic pickles, chopped Salt and pepper 8 pork or beef hot dogs, cut into 1-inch-thick slices on an angle In the bottom of a large bowl, combine mustard, vinegar, sugar, and about 3 tablespoons of vegetable oil. Add the onions, cabbage, romaine, tomatoes, and pickles and toss the salad. Season with salt and pepper, adjust seasonings, and reserve. Heat a large nonstick skillet over medium-high heat. Add in remaining 1 tablespoon vegetable oil (1 turn of the pan) then arrange the sliced dogs in a single layer. Sear them a couple of minutes on each side. Remove to paper towels to drain. Mound up the salad on plates, top with seared dogs, and serve.

grill up the sausage.
steam and then saute a head of broccoli rabe in garlic and olive oil ( I do like 5 cloves b/c I LOVE garlic) hit it with salt and pepper to taste, and some parmigiano reggiano. serve alone or with pasta.

I made chicken sausage and peppers the other day.
The chicken sausage is the pinwheel type. I bought them from Cross Island in Lynbrook. They have Cheese and Parsley inside....yummy.
I BBQ the sausage.
I saute in olive oil Onions and some chopped Garlic.
Red Peppers
Mushrooms
I then deglaze the pan with a little Balsamic Vinegar. You can use Red or White Wine if you like. (Do this after the onions are sautee'd)
After the sausage is cooked, I cut it up.
I buy Semolina bread from Dortonis in Levittown, and we make Sausage and Pepper sandwiches.....YUMMMMM!!!

someone on here posted a recipe for sausage with broccoli and pasta not too long ago and I've made it serval times - it's delicious. If you do a search for sausage and broccoli you should find it.
Rachel Ray has a couple of good recipes with sausage in them as well.
