italian girls... cooking question :-)
ok... so we're having a girls night in a few weeks, and we're doing a pasta theme. everybody is going to bring a different sauce. i ahve a vodka cream sauce that i make thats really good... but i'm just not sure when to do the cream. chances are, i'll make the sauce that afternoon, and then have to reheat it when i get there. so should i add the cream in there when i make it, or take the cream with me and add it in when i reheat it at my friends house??

I would just add it when you make it. I have reheated vodka sauce & it was fine. Also when you go to any italian store to buy it fresh, all you do is heat, the cream is already there. Yum, my favorite!

I would add the cream when rehating it at the party. Thats the way the chefs I've worked with usually do it.

Add the vream when you make it. The trick is never to let it boil after you add the cream. So, when re-heating, dont let it come to a boil.
