Peppers and Eggs

Does anyone have a recipe for peppers and eggs (it's like a pie) my sister in-law use to make it but she's unreachable. I believe it had onions,peppers,eggs,potatos and I do recall her cooking it on top of the stove.

that sounds like a frittata to me!

love them.... they're similar to quiche, in that there's a basic recipe, and you can put in what ever veggie or meat combo you want into it. Alton brown has a good recipe for them here

just replace the asparagus with peppers
