Lemon rice and chicken??
Does anyone know how to make a lemon rice? I am sure its very simple..
But I want to make grilled lemon chicken tonight with lemon rice. Does anyone have a recipe for this? TIA!

A day late and a dollar short - BUT here is my recipe for lemon-y rice:
Bring 2 cups of Chicken stock or broth to a boil. Stir in 1 cup of long grain white rice (Carolina is my rice of choice). Add 1 Tbsp of butter and bring back up to a boil. Reduce heat and cover. While the rice simmers zest one lemon. When all water is absorbed (about 20 minutes) add 1 tsp of lemon juice, a tablespoon of lemon zest, a bit of salt to taste and a palmful of chopped fresh parsley. Stir and plate. Arrange lemon slices and some parsley sprigs around the rice for garnish.
