Cooking chicken Question
Anyone get those yucky peices in their cutlets when they cook them?
I have tried everything, even resorting to only buying the thin ones and yet...USUALLY MY DH.....gets a bite of the tough/gibley piece.
What is that and how can I avoid it?
If I look at him spit out a piece and then disect the rest one more time I am going to

i make chicken all the time and don't get that. do you trim the cutlets ahead of time? I take out the ENTIRE white line that goes thru the middle of the cutlet - it's tough and kind of rubbery. I usually end up making some smaller cutlets based of where the white line is but we use them as chicken fingers Could that be what you're talking about?

I was thinking the same thing. It sounds like the fat isn't being trimmed all the way off.

I think MrsMessina is right.. if the cutlet isn't trimmed properly you will get the little fatty piece. I also notice that when I buy Bell & Evans chicken there seems to be less fat.

we usually buy our cutlets from the butcher and they always trim them up for us... we never seem to get that piece...

I usually don't trim them. I just buy the perdue thin ones. I thought that was the point of buying them (to not have to trim them).
I am starting to think it's my DH. he has always had this hang up on chicken (even when eatting out).
Next time I'll look better and see if anything further needs to be trimmed

I get those also and you still have to trim them- sometimes the white line goes from end to end lengthwise. HTH!

I would go with buying from the butcher (frequently its cheaper than the supermarket anyway), or you can use a mallet and pound the cutlets before you cook them....that's what some restaurants do.
