UPDATE with recipe: Chicken marsala...how to thicken sauce?
The recipe I use doesn't use anything to thicken the broth. So it's basically just the marala wine but very tasty.
My question is, I'd like to thicken it this time, so it's a little more substantial.....how do I do this? ___________________________________ I made this tonight and it came out great!! So easy and quick too!
I used the extra flour that I coated the chicken with to thicken the sauce and it was perfect...i thickened too much but I know for next time. I made it with brown rice and string beans.
I didn't add any sherry...and didnt use butter. I used cooking spray and a tad of olive oil.http://allrecipes.com/Recipe/Chicken-Marsala/Detail.aspx

I would dilute some corn starch in hot water....like a tablespoon or so then put it in the pan with the hot sauce and let it cook so it thickens

you can usually make a rue type thing with some flour to thicken it up

Did you simmer the sauce? if you did and it still didn't thicken, I would add some butter.

When I make chicken marsala i take some of the broth/wine mixture and put it into a seperate bowl (after it is already hot) and then add some flour to it. Whisk it together really well and add back into the sauce.
