Official vegetarian/vegan "support" thead!

I was thinking about this all night - those who read skinny b*tch, or maybe have been thinking about it and just have no idea how to, where to start, what to eat, how to handle the questions, comments, etc - I thought maybe we can start a support group from the vegan/veggie vets to help the newbies as we applaude and support you!!!!

Here ar a few starter thoughts:

I went to visit friends in California for a week. One of them cooked amazing vegan fod for us because he oved the challenge. His partner had an aha moment as he ate the food with us " I just realized - I don't have to BE vegan to EAT vegan!" Chat Icon

Going out to eat? PLENTY of veggie/vegan options at:

Indian
Japanese
Chinese
Greek

What I ate today (so far): Oatmeal w/ a banana and brown sugar, Subway veggie delight, BBQ rice chips, leftover chickpea salad, apple. (No dinner yet)

I love this idea!!! Can you give the recipe for your chicpea salad? I'm trying my hand at Seitan tonight, thanks to your instructions!

Baked last night: Vegan carrot muffins w/ Vegan cream cheese frosting. YUM

Fave Cookbook: Skinny ***** in the Kitch (only one I have right now - will buy Veganomicon)

Fave Recipe: Vegan Pad Thai and lasagna!

Can you give the recipe for your chicpea salad?



I kind of threw the chickpea salad recipe together from stuff I'd read online and I don't measure anything, but here goes:

1 can garbanzo beans (drained)
1-2 chopped baby dill pickles
1 semi-heaping teaspoon veganaise
generous squirt of mustard
a few shakes each of: dill, onion powder, garlic powder & salt
Throw everything into a food processor (or mix by hand, but I prefer the texture from the processor). Adjust spices to taste.

This is a great idea--- I will post some of my "recipes" later.

I use recipes in quotes because I don't really cook per se, everything I make is made in under 15 mins. It's more about mixing and preparation.

Vegan chocolate cake...despite the directions, I make it all in one bowl, and then pour into a baking pan. Easy and friggin delicious!


* 1 1/2 cups all-purpose flour
* 1 cup sugar
* 5 TBS cocoa powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/3 cup vegetable oil
* 1 teaspoon vanilla extract
* 1 TBS distilled white vinegar
* 1 cup cold water

I also add chocolate chips to mine, too!


DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
2. Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
3. Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 40-45 minutes. Remove from oven and allow to cool.

Not a veggie here, but wanted to let you girls know that a new vegetarian/vegan casual restaurant opened up in Forest Hills.

It's called Tierra Sana and the address is 100-17 Queens Blvd. It's a very casual place that you can either eat there or take out. Everything on the menu is vegetarian and I beleive that everything except for a few dishes are also vegan. The menu has a lot of wraps, soups, salads, and smoothies.

I tried a garden burger and it was the first time I every had one! I thought it was pretty good, but since I have never had a veggie burger before, I don't know what to compare it to! I definitely want to try some of the soups next time.
