Can you share your sauce recipe and/or meatballs recipe?

DH is sooo picky when it comes to sauce. I need to compile a lot of recipes, make them and then have him have our very own taste offChat Icon

i cant give exact measurements cuz i do everything by eye


Meat Balls

1 lb beef chop meat
1/2 lb Veal chop meat
1/2 lb Pork chop meat
few large cloves of garlic chopped up very fine
handful of parsley chopped up
1 egg
handful of bread crumbs
2 slices or white bread wet
couple of handfuls of grated cheese
salt
pepper

mix altogether and form the meatballs
try not to overmix so they dont get tough
heat olive oil in large frying pan and brown balls on all sides then drop in sauce to finish cooking

These are the BEST meatballs.. it uses a lot of eggs, makes it moist and soooo yummy!

I dont really have exact amounts so you are going to have to bare with me...FM me if you have any questions..

For the sauce..

One package of Country Style Pork Ribs (about 4 ribs)
4 Cans Tutorroso Crushed Tomatoes with Basil
1 Medium Onion
1 Tablespoon Minced Garlic
1 or 2 Tablespoons Olive Oil
Some Garlic Powder
Salt and Pepper to taste

In a Stock pot..over medium high heat brown Country Style Pork Ribs in Olive Oil. They are going to stick at first. When they are nicely browned you can flip them. Once they are browned remove them from the pot..Add the onions and sautee them until translucent adding the garlic when they are almost done. Scraping the brown bits from the bottom of the pan..Add the 4 cans of Tomatoes and about 1 can of water. Bring to a boil...put the ribs back in the pot...The sauce needs 3 hours...Add Salt & Pepper at the 3 hour mark to taste.

For the meatballs...

1lb Ground CHop Meat
1lb Ground Pork
2 Tablespoos Garlic
1 Egg
1/2 cup bread crumbs
At least 1 cup Pecorino Romano
Hot water
Salt to taste

Mix all ingredients together. If mixture is too dry add water in small handfulls to moisten. Roll meatballs into golf ball size...set aside..

At the 3 hour mark remove the Pork Ribs from the sauce. Add the meatballs and cook the meatballs in the sauce for at least 20 minutes but no more than 30. YOu dont want them to be dried out. 20 Minutes should be fine. There is no need to brown the meatballs first just cook them in the sauce. Just put them in the sauce and give it an EXTREMELY gentle stir more like folding them into the sauce..Remove Meatballs..

Serve Meatballs and Pork Ribs with the sauce and the pasta...

I get a ton of compliments on my sauce.

Here is a tip. Pork cooked in sauce will keep some of it's pinkness. Dont think that it's not done. The pork ribs add a really really nice flavor to the sauce. I dont make sauce without it. If I dont want to do the rib thing I make my sauce using pork neck bones instead.

meatballs:

tri-meat package (pork, veal and beef)
one lb package of beef
3 eggs
1 cup of breadcrumbs
1/2 cup romano cheese
coarse salt
coarse ground pepper
garlic powder
1/2 sauteed spanish onion
parsley
oregano

fry them up in olive oil. Brown on both sides but don't cook through

Sauce:


sautee 2 large spanish onions-season with salt and pepper
when translucent add 1 tbls crushed garlic-sautee until fragrant
add 3 cans crushed tomatoes
1 can tomato paste
cook for 30 minutes
add meatballs
season again with salt, pepper, garlic, oregano, basil, parsley..sorry it's a eye thing
cook for about an hour on med.
taste and re-season if necessary.
