I need suggestions for enrichment classes

I taught 3rd grade for quite a few years and have been out of the classroom for a couple of years. I met someone who said I could submit suggestions for a series of 6 enrichment classes that I might like to give in the fall at her school. I would plan the lessons, buy the materials (at their expense), and hold classes for 6 to 10 students at a time, once a week. The grades are for K, 1 and 2. Currently I understand they receive cooking, chess, science, and math.
I would love to come up with some really good ideas and get this job. Any suggestions would be a huge help. The presentation isn't the problem - just the topic. I have to get 6 quality and fun lessons out of it.

Hmmm...well, since it is election year, it might be a good time to use tgat. You can do an artist study. You could research a country and incorporate their cooking class into it, too.

Love the election year suggestion. I have to figure out how that would be fun for them. Hmm.
Also, the artist study would work nicely. I have done Picasso with his three periods with my class. Any ideas on which other artist would interest them?
