im not a fan of mayo so i make mine with garlic parsley celery salt pepper shrimps lemon and olive oil

That sounds good, have never tried it with olive oil. I think I might try this tomorrow.

I make 2 kinds....
shrimp, avocado, thousand island dressing (i serve it in the avocado shells)
shrimp, red onion, tomato, avocado, cilantro, lime, salt

The dressing is very flavorful (I like Maries, in cold section). Sometimes I will put in Lime and Sazon.
