chicken recipes
Ok well all we eat in our house is chicken and I am so bored of making the same stuff over and over again. Can anyone share any other chicken recipies with me?
An idea of what I normally make:
Chicken with terriyaki Chicken with italian dressing Chicken with Bq sauce Chicken rolled with ham & am ch Chicken rolled with broc & swiss Buff. wing chicken Baked chicken Chicken cutlet Chicken parm Chicken stir fry
BTW buff wing chicken is the only chicken dh will eat on the bone so all reciepes would have to be boneless
(now can you see why I'm bored, how much chicken can one eat )

Oven Fried chicken make 2 mixtures. In Large bowl mix: 1 cup instant mashed potato flakes 1 Tablespoon Garlic Powder 1/4 cup grated parmessan cheese
In second bowl mix: 1 egg 2 tablespoons milk
Dip chicken in milk mixture. then into other mixture. Lay in casserole pan coated in butter. Bake at 400 for 45-50 minutes

Chicken Creole: THis is so YUMMY
Cut of boneless skinless chick breast into nugget sizes. Cook in skillet with a little bit of butter till done. Set aside.
Cook following on low till brown: Chop up 4 stalks of celery 1 onion. 2 TBSP veggie oil
Add: 2 - 3 TBSP chilli powder 1 TBSP flour 1 cup water. let simmer for 15 minutes
Add: 2 cups tomato sauce 1 TBSP vinegar 1 TBSP sugarcooked chicken Cook on medium till heated through
Serve on white rice

Here are 2 more-
"Sweet & Sour Chicken"
1 can of jellied cranberry sauce 4 chicken cutlets 1 package of onion soup mix
Preheat oven to 350. Spray a casserole dish with non stick spray. make slices of cranberry sauce onteh bottom of the dish. Put the chicken cutlets over the cranberry sauce. Sprinkle the onion soup mix over the chicken. Bake covered with tin foil for 30 minutes and then bake uncovered for 10 minutes.
It's great with rice or stuffing. I love the sauce over broccoli!
Mexi Chicken
1c panko bread crumbs 1 package of taco seasoning cayenne pepper (to your taste) chicken cutlet non fat yogurt
I mix the bread crumbs, taco seasoning and cayenne pepper in a bowl. Cover the chicken cutlets in non fat yogurt and dredge in bread crumb mixture.
Bake for 30-40 minutes at 350.
This makes a great presentation on the plate...rice and then the chicken, with black beans on top, a little salsa, sour cream and cheese.

Smoked-Mozzarella Chicken 4lbs thin chicken cutlets 1lb prosciutto di parma 1 smoked mozzarella sliced Flour Salt Pepper 2 cans chicken broth 1/2 white zinfandel olive oil 2 cloves of chopped garlic butter Lay out chicken cutlets and on top of each cutlet put a slice of mozzarella and slice of prosciutto roll up and secure with a tooth pic heat large pan with olive oil and a few pats of butter in a bowl mix flour salt pepper and garlic powder dredge chicken on all sides in flour when pan is hot cook chicken on all sides till almost done (you may need to do this in batches keep each batch warm in a bowl covered with foil) once all chicken is cooked drain off excess oil just leaving about 1tbs in pan along with pan drippings add garlic to pan and cook a little add 1/2 can chicken broth and cook up all bits that were on bottom of pan add remaining chicken broth and wine bring to a boil mix flour and water in a cup till there are no lumps about 1/4 cup water 2 tsp four whisk into pan and let simmer till it starts to thicken remove toothpicks from chicken and add back into pan let chicken cook for few min and serve over rice

Hawaiian Style Chicken Flour Corn Starch Salt Pepper Garlic Powder Chicken Breast Cut in chunks package of stir fry vegetables such as red peppers pea pods baby corn water chestnuts 1 can of pineapple chunks 1 small can pineapple juice soy sauce honey paprika Maraschino cherries In a zip lock bag add equal parts of flour and cornstarch (about 1 cup of each) salt pepper and garlic powder mix and then add chicken shaking the bag to coat all pieces let sit about 1 hr in the refrigerator heat large pan with oil and few pats of butter cook chicken till brown on all sides and remove from pan drain any oil in pan in a small separate skillet add pineapple chunks without the juice and a few sprinkles of sugar and brown on all sides in pan you cooked chicken add reserved pineapple juice from pineapples and other can of pineapple juice about 1/4 cup of soy sauce and 2 tablespoons of honey and let cook till it starts to thicken mix flour and water in a cup till there are no lumps about 1/4 cup water 2 tsp four and add to pan whisking so lumps don't form add chicken back to pan with stir fry vegetables and mix to coat everything add pineapple and maraschino cherries Serve over rice

I do something similar with feta and kalamata olives, only I make a pocket and stuff the pocket with the feta and olives.

i tried one that i read on here last night.. except i didnt use any fresh spices- everything came from a jar :) it was really good though:
oven at 450....wash and dry chicken, season with salt and pepper
in a bowl, combine olive oil, sage, garlic powder, thyme and parsley. coat the chicken with the olive oil mix. i also put olive oil on the bottom of the baking dish so it wouldnt stick
put it in the oven for 30 min. every 10 minutes, i basted the chicken, flipped it over to get it cooked evenly on both sides
made it with rice and sauteed string beans

My family loves this one - Chicken Lasagne Roll-ups!
Total Time: 40 minMakes: 6 servings -6 lasagna noodles, uncooked -1 pkg. (6 oz.) OSCAR MAYER Italian Style Chicken Breast Strips (I usually just use the thin-sliced chicken cutlets. Sometimes I bread them first, sometimes I don't). -1 cup Ricotta Cheese -1/4 cup Grated Parmesan Cheese -1 egg, lightly beaten -1/2 tsp. Italian seasoning -2 cups spaghetti sauce -1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
PREHEAT oven to 375°F. Cook noodles as directed on package. Rinse with cold water; drain well
MIX chicken, ricotta cheese, Parmesan cheese, egg and seasoning; spread 1/3 cup of the chicken mixture onto each noodle. Roll up tightly; place, seam sides down, in 9-inch square baking dish. Pour spaghetti sauce over roll-ups; sprinkle with mozzarella cheese.
BAKE 30 minutes or until heated through.

I've made all of the reciepes off the stuffing box. I believe that one was good and theres one that you put sour cream, chicken , cheese and I forgot the rest but that was really good as well.

Ricotta and spinach chicken roll-ups:
pound chicken breast until thin combine ricotta cheese and cooked spinach and spoon into the center of the chicken breast. Roll the chicken and cook in a 350 oven until chicken is cooked.
Its good with a cream of mushroom/ cream of chicken soup sauce poured over the chicken before baking.
