Crockpot Lemon Chicken

INGREDIENTS:
6 boneless, skinless chicken thighs, cut into 1" pieces
1/3 cup flour
1 tsp. salt
1/8 tsp. pepper
2 Tbsp. olive oil
1 tsp. balsamic vinegar
3 Tbsp. ketchup
3 Tbsp. brown sugar
6 oz. can frozen lemonade concentrate, thawed
2 Tbsp. cornstarch
3 Tbsp. water
PREPARATION:
Mix flour with salt and pepper in shallow dish. Coat chicken pieces in this mixture. Shake off excess and brown in olive oil in a nonstick skillet over medium high heat. Remove chicken and place in a 3-4 quart crockpot.


Mix the vinegar, catsup, brown sugar and lemonade concentrate in small bowl and pour into the skillet. Cook and stir, scraping to remove browned bits, until mixture comes to a boil. Pour sauce over chicken in crockpot. Cover and cook on LOW for 7-8 hours or on HIGH for 3-4 hours. When ready to serve, remove the chicken to a warm platter and cover. Combine cornstarch and water in small bowl, mix well and stir into the sauce. Cook on HIGH for 20-30 minutes until thickened. Serve with chicken and hot rice. 4 servings

Chicken with Potatoes, Sun-dried Tomatoes, and Artichokes
Ingredients:
1¾lbs pounds small red potatoes, scrubbed, and thinly sliced
¾ cup sun-dried tomatoes (do not rehydrate), coarsely cut up
¼ tsp garlic pepper
5 Tbsp. balsamic vinegar
6 Skinless, boneless chicken breast fillets or halves
½ cups roasted red pepper strips
1 (13 ¾ ounce) can quartered artichoke hearts, rinsed and well drained
3 Tbsp drained capers
¼ cup chopped fresh basil
Preparation
Place the potatoes in slow cooker. Sprinkle ½ cup of the sun-dried tomatoes and the garlic pepper over the potatoes. Drizzle on 3 Tbsp of the balsamic vinegar. Cover and cook on the high heat setting 2 hours. Reduce the heat setting to low. Place chicken breasts on top of the potatoes. Sprinkle the remaining ¼ cup sun-dried tomatoes, the roasted pepper strips, and the artichoke hearts over the chicken. Cover and cook on low about 3 hours, or until the potatoes are tender and the chicken is cooked through. Drizzle remaining 2 Tbsp vinegar over the top and garnish with the capers and basil.


Turkey Chili
Ingredients:
1 package of lean ground turkey (of course you can use beef)
2 Tbsp chili powder
1 ½ Tbsp ground cumin powder
3 garlic cloves crushed through press
1 (7-ounce) can diced green chilies
Jalapenos optional…if you like some heat!
1 medium onion, chopped
1 (30-ounce) can chili beans undrained
2 (15 ounce) can black beans, rinsed and drained
1 (15 ¼ ounce) can whole kernel corn
1 (14.5 ounce) can diced peeled tomatoes
1 (12 ounce) can or 2 (6 ounce) cans tomato paste
1 green pepper chopped
Preparation
Brown ground turkey and drain away excess fat. In crock-pot, mix together the turkey, cumin, chili powder, garlic, chiles, jalapenos, and onion. Add the chili beans, black beans, tomatoes with their liquid, and tomato past. Mix gently to avoid smashing the beans. Cover and cook on low about 5 hours of until turkey is tender.

Easy Santa Fe Chicken
Ingredients:
1 green pepper, cut into strips
1 medium onion, diced
1 can jalapenos
1-15ounce can black beans, rinsed and drained
1-15 ounce can white cannelli beans (or any time of bean you prefer), rinsed and drained
28 oz can chopped tomatoes
1 can tomato paste
1-15ounce can whole kernel corn
6 boneless chicken breasts, trimmed is necessary
2 Tbsp. chili powder
1 cup shredded reduced fat cheddar cheese or 1 cup reduced fat sour cream (optional)
Preparation
Place chicken breasts on bottom of crock-pot. Place rest of ingredients and cook on low heat for 6 to 8 hours.
Serve with rice or reduced fat crescent rolls. If desired, top with reduced fat cheddar cheese or a dollop of low-fat sour cream.

Chicken Chow Mein
Ingredients
1 Tbs oil
1.5 lbs boneless, skinless chicken breasts, cut in 1"
pieces
4 carrots, thinly sliced
4 green onions, sliced (include green portion)
3 stalks celery, sliced
1 cup low sodium chicken broth
1 Tbs sugar
1/3 cup light soy sauce
1/4 tsp crushed red pepper flakes
1/4 tsp ground ginger
1 clove garlic, crushed
8 ounces bean sprouts
8 ounces water chestnuts, sliced
1/4 cup cornstarch
1/2 cup water
Preparation
Heat oil in skillet and brown chicken (if you don't have
time to do this, you can skip it). Put chicken pieces in
crock pot. Add all ingredients except cornstarch and
water. Stir and cover; cook on low for 6 to 8 hours.

Turn to high. Combine cornstarch and cold water in a
small bowl; stir until dissolved. Stir into the crock pot
liquids. Keeping cover slightly ajar to allow steam to
escape, cook until thickened, about 15 to 30 minutes.
Serve over rice or with chow mein noodles. May be doubled
for 5-quart crock pot. Serves 6.

Chicken Enchiladas
Yield: 16 enchiladas, 8 servings
Ingredients
1 1/2 pounds skinless boneless chicken breast
Salt and pepper, to taste
2 teaspoons cumin powder
2 teaspoons garlic powder
1 teaspoon Mexican Spice Blend
1 red onion, chopped
2 cloves garlic, minced
1 cup frozen corn, thawed
5 whole green chilies, canned
4 chipotle chilies, canned
1 (28-ounce) can stewed tomatoes
1 cup Cheddar and Jack Cheeses, shredded
16 corn tortillas
1 1/2 cups enchilada sauce, canned
Garnish: chopped cilantro, chopped scallions, sour cream, chopped tomatoes
Preparation
Place chicken in crockpot with next ingredients (up to tortillas and enchilada sauce).
Simmer on low for 6 to 8 hours. Break apart chicken and stir. Then allow to cool 30-60 minutes.

To assemble:
Microwave tortillas on high for 30 seconds. This softens them and makes them more pliable. Coat the bottom of 2 (13 by 9-inch) pans with a ladle of enchilada sauce. Using a large shallow bowl, dip each tortilla in enchilada sauce to lightly coat. Spoon 1/4 cup chicken mixture in each tortilla. Fold over filling, place 8 enchiladas in each pan with seam side down. Top with remaining enchilada sauce and cheese.
Bake for 15 minutes in a preheated 350 degree oven until cheese melts. Garnish with cilantro, scallion, sour cream and chopped tomatoes before serving. Serve with Spanish rice and beans

Here are a few:

Chicken and Sweet Potato Stew

Ingredients:
4 boneless, skinless chicken breasts, cut into bite-sized pieces
2 medium sweet potatoes, peeled and cubed
2 medium Yukon Gold potatoes, peeled and cubed
2 medium carrots, peeled and cut into 1/2-inch slices
1 28-oz can whole stewed tomatoes
1 tsp salt
1/2 tsp black pepper
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
1 tsp paprika
1 tsp celery seed
1/4 cup fresh basil, chopped
1 cup nonfat, low sodium chicken broth
Directions:
Combine all ingredients in the slow cooker. Cover; cook on Low for 6 to 8 hours or on High for 3 to 4 hours.

Crockpot Boneless Breasts off Chicken Recipes
Mexican Chicken
Throw however many boneless skinless breasts you want into your Crockpot. You can start them from frozen if you want. Pour on a 12-oz. jar of your favorite LC salsa. Cook on Low 8 to 10 hours. Remove the chicken with a slotted spoon, turn Crockpot to High, and add a jar of Tostitos or Taco Bell Salsa con Queso. Mix well, put the lid back on and let it get hot, then put the chicken back in the sauce. It's so easy and so good!



Greek Style Chicken
I also do breasts or boneless thighs Greek style - put a single layer of chicken in the pot, drizzle on a little extra-virgin olive oil, just enough for each piece to have a bit; then sprinkle on garlic salt, freshly ground pepper, and dried crushed oregano; next drizzle on a little fresh or bottled lemon juice. If you have more chicken, repeat the layer again.

Cook on Low 8 hours or so.

Tonight I made the italian herbed chicken using the McCormickl slow cooker spices. It calls for diced tomatoes, tomato paste, mushrooms, chicken parts and the spice packet. I served it over whole wheat angel hair tonight and it was incredible :)
