Re: Chicken soup recipes.. please!!
I buy a cut up chicken or sometimes I use boneless chicken breast.
Put the chicken in a pot (cut up the breast in pieces) cover the chicken with water. Add a cut up onion, the leafy parts of the celery staks, parsley, 2 packages of chicken boullion and Mrs Dash (I generally do not use salt in my cooking but you can add salt and pepper at this point)
Bring the chicken to a boil and let cook until the chicken looks almost done.
MEanwhile, I peel carrots and potatoes, cut them in to bite sized pieces and chop up a few celery stalks. Use as many or as little carrots and potatoes that you would like. I also use 1 or 2 cans of diced tomatoes. Put them in with the rest of the veggies.
After the chicken is done, I put in the veggies bring it back up to a boil, lower the heat and let it simmer until the veggies are soft enough for a fork to go into but not too soft that they break apart.
While the veggies are cooking, I make either pasta or rice to serve with the soup. right before you are ready to serve the soup, I cut a lemon in half and squeeze the juice right into the pot and mix. It adds just that last little bit of flavor.
Serve with excellent grated cheese!

Re: Chicken soup recipes.. please!!
olive oil 2 boxes chicken broth 1 onion sliced 2-3 carrots cut into thick slices or large chunks 2 stalks celery cut into think slices 2-3 bay leaves pepper to taste
ground chicken salt/pepper to taste 1 egg handful breadcrumbs handful grated cheese
tortellini, little pasta, rice or baby raviolis
Saute the veggies/bay leaf in a little bit of olive oil and add in the chicken broth, a little pepper to taste. Let simmer until veggies are tender about 20-30 mins depending on how thick they are cut. Meanwhile mix together chicken, s&p, egg, breadcrumbs and cheese. Make little baby meatballs and add these to the boiling soup, let cook an additional 10-15 mins until meatballs are done. While that is cooking I usually boil up some tortellini/pasta/rice depending on whats home and then add that into the soup before serving.
This soup is so good and it is great for a week night meal since it is so quick. I also add in any other veggies I have in the house...I have stirred in a bag of spinach, sliced mushrooms, sliced zucchini or peas before. It always turns out delish!!

Re: Chicken soup recipes.. please!!
I made this today- soooo good!
Cheaters Chicken soup
2 large cans( the big cans I think it is 64 oz) of chicken broth- 1 can low sodium, 1 can regular sodium 2 chicken legs 1 package of soup greens with celery carrot, onion , turnip, parsnip, dill and parsley in it
Put in chicken legs add water to cover. Simmer for about 25 minutes, skim off fat.Add both broths- low sodium and regular , add soup greens, and rest of veggies. Make sure to peel carrots, etc. Cook about an hour or till chicken is just about to fall off of the bone. Take out chicken, take off skin, cut chicken into pieces, add back to soup. Simmer about another 30 minutes. ENJOY!!! I made this and it was the best chicken soup I ever made before. I hope you like it. Let me know what you think if you make it.
***ETA- I think the large size broths are 62 oz or something like that***

Re: Chicken soup recipes.. please!!
Okay, here's what I did the other day.
In a pot, I heated up about 2 tablespoons of olive oil and sauteed about 1/2 onion (yellow) and 1 clove garlic.
I added chopped carrots and celery.
You can add parsnips and turnips, too.
After a few minutes, I added a containter of chicken broth and then water, too.
You can add salt and pepper.
Now, I took a frozen chicken breast and defrosted it, then took a fork and knife and shredded it apart.
Then I added it to the pot and simmered on low for about 2 hours or so.
