really good meatloaf?

for some reason im craving meatloaf. never made it before, and I find out DH has never tried a meatloaf he's liked before...

I'm going to make one along with something I know he likes, and if he doesnt like the meatloaf I'll just have it for lunch until it's gone, but I want a really good recipe.

Help me! Especially if you have a recipe that people who dont normally eat meatloaf like! TYIA Chat Icon

I am making one tonight!
Neither DH or I really LOVE meatloaf but these 2 ways we do!!

Beef, Pork, Veal mixture for meatloaf
1/2 packet of Tempo Meatloaf mix OR Plain Bread crumbs (I dont really measure it just put enough in so the meat is still moist
1 packet Lipton Recipe Secrets Beefy Onion mix
2 Eggs
2 Tbls Ketchup
Shredded American / Chedder Mix

Mix all together, shape and bake about 45 minutes. It's soooo yummy!!

OR here is another way I do it but it's not exactly healthy but sooooo good.

I do the same as above except Italian Breadcrumbs, and not the shredded cheese. Instead in the middle of the meat slice Mozzerella cheese thick enough so when you slice the meatloaf it's all melted in the middle!
Then pour BBQ sauce over the top and put 2 slices of bacon. Then bake!!!

I use about 2+ lbs of meat.
2 Eggs
Maybe a cup of Breadcrumbs
Few TBSPS of Parmesan
Few Drops of Worcestire Sauce, Steak Sauce, sometimes a dallop of ketchup and/or mustard

Few Dashes of garlic powder, onion powder, salt and pepper

After Im done shaping it in the Pyrex dish....I sprinkle more Parmesan cheese on top.......sometimes I will pour a can of chopped/diced tomatoes (including the juice/sauce).

Bake in oven at about 350 for an hour.

This is my favorite meatloaf recipe, Martha Stewart Meatloaf
Its great, it has a bbq type sauce brushed over. I love it.

We do an italian meatloaf and its the only way I'll eat meatloaf.

I use about 1 1/2 lbs. of chopmeat (you can use the meat mixture with the veal, etc), italian breadcrumbs (about a handful), garlic powder (to taste), an egg, a drop of milk, a handful or two of pecarino ramano cheese, some ground pepper, and about 1/3 cup of delmonte tomato sauce. Mix together well. Flatten in a loaf pan.

Then, take about 4 slices (maybe 1/4 inch thick) of mozzerella cheese and lay it on the meat. Take 2 - 3 slices of uncooked bacon and lay it on top of the mozerella cheese. Fold the meat over the top of the slices (to form a loaf).

Bake at 350 for about 45 minutes. HAlf way through baking it, put one more slice of bacon over the top of the loaf to cook. When theres 5 minutes left, I pour a little delmonte tomato sauce over top (just to warm it).

Serve warm -- the cheese will be melted on the inside and the bacon will be cooked.

This is how I make my meatloaf. You can also substitute the ketchup for some canned diced tomatoes

Meatloaf
Ingredients
-1 envelope Onion Soup Mix
-2 lbs ground beef
-3/4 cup plain dry bread crumbs
-2 eggs
-3/4 cup water
-1/3 cup ketchup

Directions:
-Preheat oven to 350, in large bowl combine all ingredients
-in 13x9 baking or roasting pan, shape into loaf
-Bake 1 hr or until done. Let stand 10 minutes

Brown Sugar meatloaf, by far the best!

1/2 cup packed brown sugar
1/2 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed saltine cracker crumbs
pack of onion soup mix
A few splashes of worcestershire sauce

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
Sprinkle with a little extra brown sugar
Bake in preheated oven for 1 hour or until juices are clear.

Stovetop Stuffing Meatloaf


Ingredients:
2 lb
1 pkg
1 c
2
1/2 c ground beef
(6oz) StoveTop Stuffing Mix (any flavor)
water
eggs, beaten
BBQ sauce, divided

Procedure:
1. Preheat oven to 375ºF.
2. Mix all ingredients except 1/4 cup of BBQ sauce.
3. Shape meat mixture into 2 oval loaves, side by side, in a 13" x 9" baking dish.
4. Top with remaining BBQ sauce.
5. Bake for 35 minutes or until center is no longer pink.

All the recipes above look great. I like to use a mix as well. I also put a dollop of sour cream in to keep it moist.

This is my favorite. I get the Lipton Beefy Onion Soup mix and use the recipe straight from the box.

Also I don't make one big loaf. Instead I make small mini loave, about 2.5 inches in length and 1.5 inches in width. They take less time to cook and I love the ends so every piece is an end piece! I need to make this soon!
