I am getting sick of mushrooms and need some ideas.

I'm really into broccolini right now.

I sautee it in extra virgin olive oil with sliced garlic on medium heat until it turns green. Then, I add in a little water and cover it - cook until it turns tender. Then I add some lemon juice and red pepper flakes. It's delicious!

I also roast asparagus with some olive oil, salt and pepper - and sometimes add garlic and balsamic vinegar.

Steamed broccoli is a staple in our family. The ziploc steam-fresh bags make it super easy! (Just wash, cut, and place them in the bag in the microwave for 3 minutes).

Sauteed onions and peppers.

Mixed greens salad with chopped peppers and cucumbers.

Corn is always good. You can make it on the cob, or make a salad out of it. One yummy thing is corn on the cob (cooked), then run a knife down the sides to get it off the cob, add scallions, a little olive oil, salt and pepper.

Eggplant is also good. You can roast it after putting on some olive oil, salt, and pepper.

Sauteed zucchini is good too. I sautee it in olive oil, then mix some breadcrumbs, parsley, and lemon zest and top it with that.

Snap peas sauteed with onions are good also. I just use olive oil and a little soy sauce on them.

Those are basically all of the veggies we eat!

Creamy Broccolli and Cauliflower:

Cut broccoli and cauliflower spears into bite sized pieces. Pour a can of cream of mushroom soup over them and stir so the veggies are coated. Top with bread crumbs. Bake at 350 until veggies are tender.

My family loves Brussel sprouts. I make them with bacon, onions and garlic.

sweet potatoes - delicious, healthy and easy to make.

i usually do them in the oven but if you want to make it real simple microwave them first - they really do taste just as good!! here's what to do:

take the potatoes, i usually have two, make sure they are around the same size, poke holes with a fork in the top of the potatoes -- all over -- for the steam and air to get out. then, make two big slits down the center. put in the microwave for 4 minutes on high -- after 2 minutes rotate -- then, rotate again at the four minute mark and put them in for an additional 2 minutes. they should be steaming when done -- like a hissing sound.

then, to cruch them up, just put them in the oven for 2-3 minutes at around 400-450 degrees...then they get all crisp on the outside -- before i put them in i add butter, brown sugar and a little bit of cinammon.

I prep my broccoli the exact same way that Maybeamommy does her broccolini. It's awesome.

I also love roasted sweet potato rounds (it's exactly what it sounds like - sweet potatoes cut into circles and roasted with a little olive oil and salt).

Since my kids tend to like their veggies raw - we do a lot of salads - tomato mint salad, cucumber with red onion and green bean salad with sliced carrots are faves.

I also like to bread the broccoli.

I love broccoli and carrots just plain steamed- maybe with a little butter.

Asparagus- steamed OR grillled/broiled with olive oil, balsamic vinegar and a little parmesan.

Zucchini and squash sauteed with olive oil, a splash of balsamic vinegar and salt and pepper. Yum.

Also love artichokes- steamed until done then dip the leaves in a quick cream sauce (milk/butter/cornstarch to thicken/pepper)

DS loves string beans so I cook them with some garlic and put olive oil on them before I serve them.

i love spinach so i saute garlic and oil add the spinach till its almost cooked and add some lemon juice

i stem them for a few min then heat a wok with chopped garlic oil and red pepper flakes add the beans soy sauce, tablespoon of brown sugar and a dash of sesame oil
