Easy Chicken Soup w/ dumplings i just made
2 boneless skinless chicken breasts 2-3 quarts of chicken broth 1 cup chopped carrots 2 diced shallots 2 bullion cubes bay leaf 2 cloves garloc handful chopped fresh parsley 1 cup flour
boil 2 bonless chicken breasts until they ae not pink. (save the water that you boiled the chicken in)
shred chicken breast (using 2 forks and pulling it apart.) once shreadded, set aside.
to a pot fill 1/2 full of chicken broth then fill it to 2/3 full using the leftover water you boiled the chicken in. get that water mixture boiling.
to that add sliced carrots (about 1 cup) and 2 chopped shallots. i also added generous salt and pepper, 2 bay leaves and 2 chicken bullion cubes for more flavor. also added 2 crushed garlic cloves.
i boiled it for 10 minutes then i added my shredded chicken and 1/2 cup chopped fresh flat leaf parsly.
simmer for 30 minutes.
before serving bring soup to roling boil
combine flour, salt pepper and water until you get a smooth pasty consistency. drop into boiling soup and let cook for a few minutes.
serve
