Chicken soup-Anyone have a quick and easy recipe?
Im not much of a cook but enjoy soup and I have a sick DH who could definitely use some tonite.

Quick and chicken soup dont really go together. Takes a couple of hours. If you want quick you can cut up fresh vegetables like carrots and celery and boil them in chicken broth until tender. If you are looking for the 3-4 hour homemade soup recipe let me know

I make a quick chicken soup
I take chicken breasts (cut them up in bite sized pieces), onion, celery, parsley. fresh pepper and Mrs Dash put in a pot and cover with canned/boxed chicken stock.
Bring to a boil, while that is coming to a boil, I peel carrots and potatos. Put them into the pot and add more stock if necessary. Bring back to a boil and lower down to a simmer and cook until the potatoes are soft but not mushy. right at the end I squeeze in the juice of one fresh lemon.
I make some pasta or rice on the side. I put the pasta in the bowl and put the soup over it.
Enjoy!!

I have a quick chicken meatball soup that is really good:
2 tablespoons extra virgin olive oil 4 ribs celery from the heart, chopped 1 medium onion, chopped 1 1/2 cups store-bought shredded carrots 1 bay leaf Salt and pepper 6 cups chicken stock 1 pound ground chicken 1 egg 1/2 cup Italian bread crumbs 1/2 cup grated Parmigiano Reggiano cheese dried or fresh parsley any pasta or noodles (I usually use tortellini bc DH likes it)
Heat a soup pot over medium to medium-high heat with olive oil. Add celery, onions, carrots and bay leaf, season with salt and pepper and cook five minutes. Add stock to the pot, cover and bring to a boil.
Place chicken in a bowl and season with salt and pepper. Add egg, bread crumbs and cheese and parsley.
Combine the chicken mixture with your hands, then roll into walnut-size meat balls and add to the soup. Add pasta and cook until both meatballs and pasta are done.
(I usually throw in any veggies I have in the fridge or freezer - I have added mushrooms, peas, spinach, zucchini)

Chop up carrots (6-8), celery (4 stalks), and onions (3) into chunks. (I like lots of carrots ). If you're using fresh parsley chop some up too. Put some olive olive in bottom of large soup pot and saute half a chopped onion, 1 chopped celery and 2 chopped carrots and a sprinkle of parsley until lightly browned. Throw a whole cleaned chicken in the pot and saute for a minute or so (just trying to fry a little of that skin up). Take off heat and fill pot up with water until the chicken is covered. Put in remaining parsley. Throw in two chicken boullion cubes. Cover the pot and boil. When water boils, throw the rest of the veggies in with salt and pepper (to taste), cover and simmer (low) for three - four hours. The longer you cook it the better it will taste. You can also use a package of chicken legs and thighs in place of the whole chicken (has even more flavor). When soup is done, remove the chicken from the pot...be careful...it will start falling apart and debone...throw chicken pieces into the soup and serve over little pasta....YUMMY. Always make for DH when he's sick. The prep work is the only PITA with chicken soup because aside from stiring it once in a while you can leave it be for hours just "doing its thing" Good Luck!!!

I follwed Paula Deen's recipe and thought it came out pretty well. I used canned chicken broth and a rotisserie chicken to cut down prep time
The Lady's Chicken Noodle Soup Recipe courtesy Paula Deen Show: Paula's Home Cooking Episode: Cozy Country Cooking Stock: 1 (2 1/2 to 3-pound) fryer chicken, cut up 3 1/2 quarts water 1 onion, peeled and diced 1 1/2 to 2 teaspoons Italian seasoning 1 teaspoon lemon-pepper seasoning 3 cloves garlic, minced 4 bay leaves 3 chicken bouillon cubes Kosher salt and freshly ground black pepper Soup: 2 cups sliced carrots 2 cups sliced celery, with leafy green tops 2 1/2 cups uncooked egg noodles 1 cup sliced mushrooms 3 tablespoons chopped fresh parsley leaves 1/3 cup cooking sherry 2 teaspoons chopped fresh rosemary leaves 1 cup grated Parmesan, optional 3/4 cup heavy cream, optional Seasoning salt Freshly ground black pepper Crusty French bread, for serving
For the stock: add all ingredients to a soup pot. Cook until chicken is tender, about 35 to 45 minutes. Remove chicken from pot and set aside to cool. Remove and discard bay leaves and onion. You should have approximately 3 quarts of stock. When chicken is cool enough to touch, pick bones clean, discarding bones, skin, and cartilage. Set chicken aside. For the soup: bring stock back to a boil, add carrots, and cook for 3 minutes. Add celery and continue to cook for 5 to 10 minutes. Add egg noodles and cook according to directions on package. When noodles are done, add chicken, mushrooms, parsley, sherry and rosemary. Add Parmesan and cream, if using. Cook for another 2 minutes. Adjust seasoning, if needed, by adding seasoning salt and pepper. Enjoy along with a nice hot crusty loaf of French bread.

when FH is sick I make him matzah ball soup. He loves it. I use the kind that comes in a box and it takes about a half hour total. I think the brand is manischevitz and you can find it in your ethnic foods aisle

I make this in a crock pot.
1 onion 1 bag baby carrots A bunch of celery 1-1.5 lbs chicken breast 2 cans chicken broth
When it is done I serve it over rice with cream or celery soup( 1/2 a can of water) as a sauce on the top. Its so good.

I disagree....
Take 2 big 32 oz cans of chx stock boil 6-8 chx breasts in it. Cook about 20-25 min on Med heat. Add carrots, celery, onion. Add oregano, basil, salt pepper and simmer for about 5-7 min. Add egg noodles simmer about 5min. All in all it takes about an hour and is the type of recipe that you can start and do other things around the house like laundry and do on.... Hope this helps

1 bag of carrots chopped 1 bag of celery chopped 1 large onion sliced up 1 or 2 large potatoes a bunchfull of arugulla 4 chicken breasts skin on box of ditallini
take the chicken skin on & put in a huge pot of water , once it comes to a boil add all the veggies let that cook down until the top of the water appears to have a greasy look, ( yea sounds nasty but thats the flavor) once u see that skim it off & then remove the chicken , take the skin off & shred the chicken pieces & then put the chciken back into the water , let that cook for a good 1/2 hour , until the vegs are soft , the last 10 min add the arugula. Boil the ditilini & then just add that to the bowls of soup. If you add the ditiln to the pasta you wont be able to freeze it well. & Choicken soup is great for freazing..
BTW , emily has had this & loves it ,
