"Adult" Mac - n - cheese
Anyone have a recipie for mac-n-cheese. I'm making steak for v-day, and I'd love to make it as a side dish, I'm thinking cooked in a ramekin or something like that.
any suggestions?

we're gonna try the one that won the food network contest to be on the menu at TGI Fridays. we've had it at the restaurant and its incredible!! 5 cheeses, bacon... awesome! we found the original recipe online so we're gonna make it this weekend and see how it compares.RECIPE

ETA I hate that they added chicken to it at Fridays. They should have left it alone.

I make mine by making a roux of 2 T butter, melted and 2 T flour. Whisk until it becomes a golden color. Add 1 1/2 c of milk, cook and stir until thickened. Be careful not to let it boil. Add one bag of shredded cheese, more if you want. Squeeze in 1 T of mustard (secret ingredient). Pour over pound of elbow pasta.

My mother made it, but she used Asiago, Cheddar and Parm. It was out of this world!

I make a typical mac and cheese - but I have started doing it with a a lot of Gruyere and a little bit of mild cheddar. I mix in some crispy pancetta and top it with Panko and crumbled pancetta. It is delicious.
