Re: Help with vegetables!
Take squash or zucchini and cut them in half.
Then scoop out the middle and place in a bowl-----here you can be creative but what I do is--------add garlic, crushed red pepper, Mrs. Dash (what ever herbs you like fresh or not)
Then I chop up some mushrooms (you could probably add anything you like ---I also added smashed kidney beans one time) and mix very well.
Fill squash halves back with filling and sprinkle tops with bread crumbs---(I use italian style) and then either misto with oil or I use spray butter or even italian dressing to get breadcrumbs wet and place in baking pan (spray pan with Pam first) and then bake at 350 for like around 20-30 minutes---until squash is crisp not soggy!
Sorry it isnt an exact recipe. I make it all the time and it is always different everytime.

Re: Help with vegetables!
I also take cous cous---just the near east box with the already packaged seasoning in the box----and I add various vegetables such as peppers, squash, zucchini, broccoli ect...... and follow the directions on the box
Basically put the veggies in the water with the seasonings bring to a boil then add the cous cous and pull off the heat, cover with lid and let is sit for 5 minutes or so............its a really good side dish but also it is good as an entire meal or even put on top of salad-----If you want to add beans then add at the end not during the boiling process.

Re: Help with vegetables!
I take Zuccini, Yellow squash, a can of stewed tomatoes add some pepper, salt and italian seasoning and bake at 350 for 20 min. Then top with cheese (I chedder or mozzerella) and let cheese melt on top. It is so simple, but so good.
I take potabella mushrooms and wash, poke fork holes into the top and marinate in worchester sauce for 20 min. then bake at 400 for 15 min.
