Will this work?? I'm just plain out of ideas!!
Figuring out what to make for dinner is such a ... so I'm trying to think of ideas and this is what I came up with - what do you think?
If I get pitas or quesadillas and put roast beef and cheese in it and put it in a quesadilla maker to heat up a little... does that sound like a good idea? I was thinking about maybe doing that with pepperoni and some mozzarella and tomato sauce?
Any feedback would get me to sleep faster LOL

I'd rather have roast beef on an toasted english muffin rubbed w/ garlic.
Maybe check out pilsbury website - sounds like you could use some pie crust stuffed w/ something recipes.

i buy ciabatta rolls - put the cheese on the roll and throw it in the toaster oven to heat up. if you want the roast beef to be hot too then throw it in a sautee pan for a couple of minutes!

Not sure about the roast beef but I always make pita/tortilla pizzas with the ingredients you mentioned. I rub some evoo on the pita, put it in the toaster oven until lightly toasted. Add sauce, cheese, toppings. Put back in and broil until cheese is bubbly. YUM!

Sometimes DH makes hot open face sandwiches for dinner. He buys a pound of turkey or roast beef at the deli counter. Heats it up a little in the oven, then puts it over white toast and covers it with gravy. Serve this with some fries and you're done. I actually love when he makes this.
