Easy make ahead breakfast - 1pp each
Egg Muffins (Based on the ingredients below it's 1pp per muffin.)
Ingredients
1. 16 oz container of Egg Beaters 2.1 Tbsp bacon bits 3.1 Tbsp shredded cheddar cheese 4.Handful of chopped frozen spinach 5.1 Tbsp frozen chopped onion Directions
Preheat oven to 350 degrees. Spray muffin tins with cooking spray. (Pam makes a Butter flavored one, which goes nice with this.)
Defrost/steam frozen veggies in the microwave. Drain out all water.
Mix together all ingredients.
Put mixture into tin using a 1/3 cup measuring cup. (goes into 6 cups)
Bake 20 minutes or until firm to touch.
That’s it! I made a double batch for us so we could all enjoy throughout the week. (This was a hit with DS - 19 months - great to reheat at daycare.) I’ll change it up each time based on what veggies I may have in the freezer or fresh from this summer’s farmer’s markets! Can’t forget cheeses – goat, cheddar, feta… meats…sausage or tofu crumbles, bacon bits…mmmm!

This is great! I like to make a single version in the microwave that's similar. I use the small ramikin (sp?) dish and spray with cooking spray. Add 1/4 cup egg beaters, chopped veggies and herbs and sometimes cheese. So yummy!

Bump! I made these yesterday and they're delish! I used low fat shredded mexican cheese and used 3 TBSP. Still came out to 1pp each since I divvy'd them into a batch of 12.

I made these today - didn't have the bacon bits on hand and it was a little bland but worth it. Next time I will use if not bacon bits then some shredded deli ham

I made it this morning! But you're right it is a bit bland. I like them a lot though, so easy!

i made them yesterday!!!
i seasoned with salt and pepper
used a box of spianch(a little more than i hand full)
2tbsp of the bits & cheese
and some adobo sauce from chipotle chile
CAME OUT GREAT!!!
i did measure 1/3 per cup and i was able to make 8
