Healthy Eating & Food Alternatives

My husband and I want to try some healthier items in regards to carbs and grains that we have never eaten before (like brown rice believe it or not!). We realized we are so healthy with our oils, proteins, vegetables, fruits but that we have too many unhealthy carbs.

Do you have any suggestions for healthy and filling items that can replace potatoes, pasta, white rice, white bread, etc.?

I use quinoa instead of using rice, to me it tastes the same and its better for you

I hate cooking rice so I buy the frozen brown rice at trader joe's - just toss it into the microwave for 3 1/2 minutes!

I know rice is a pain to cook but the instant or quick cooking rice lacks the nutrients that the full cook time rice has. We get the bagged brown rice from wal mart. We have a rice cooker so we cook a large amount at a time so we don't have to worry about it! It's super easy and super cheap.

this is a great idea using a rice cooker, but how do you make the rice taste good the next day?

I use water (of course), salt and a tsp of light butter for some added flavor.
(or olive oil for the stickyness).

i love this too....its already cooked, so you are basically just heating it up

You can put chicken broth in it to flavor it a bit...use salt, pepper too! We eat it plain

Uncle Ben's is the best tasting brown rice IMO. I add a chicken broth cube (forgot word) to the water before adding rice and it gives it a nice flavor and dont need to add butter.
You can add sauteed veggies (peppers, green onions, mushrooms whatever you have) and you have a nice side dish. If you dont add the broth a lil low sodium soy sauce is another exellent choice.
