Not sure how to make it but whatever you do, don't spill it into your sink and run the water. That shit expands! I remember as a kid, my mom made polenta and somehow it got into the sink and she tried to wash it down and it kept growing and growing...

I buy the tube kind- we pan fry it to make it crusty and then drizzle it with balsamic glaze- yum!

Basic: Polenta Sausage Marinara Sauce Mozzarella cheese
Lay 1-1 1/2" polenta into a greased pan. Top with browned sausage mixed with marinara sauce. Top with mozarella cheese. Bake until cheese melts.

I grew up on Polenta - it is one of my favorite meals.
Not sure how the pre-made is like, but some ways that I make it:
Polenta with a mushroom sauce (using dried porcini mushrooms)
Polenta grilled and than served with gorgonzola - YUMMMM
Polenta with a lentils and cotechino sauce (boiled sausage, I buy it a my local Italian deli)
The key is to have good Parmigiano on hand.

I slice it up put it in a pot with a little bit of milk butter and parmasean cheese. You have to mix it a lot so it breaks up. If it needs extra liquid I add some chicken stock.
