Recipe Rave: Sausage Polenta Casserole

Someone posted a few days ago about what to do w/ sausage. I found this recipe and tried it tonight. Super easy and tasty.

Sausage Polenta Casserole

I modified the recipe (less ingredients)

6-7 Sausage links (about 1 pound)
EVOO
18 oz polenta
Pasta sauce
Mozzarella cheese ( said 8 oz but 12 would have been better)

Ground sausage meat. (take out of casing)

Put about 1 tablespoon EVOO in 9x13 pan. Cut polenta into 1/4 inch pieces. Put in pan. Brush about 1/2-1 tablespoon EVOO on top. Broil until golden brown.

After sausage meat is cooked, add pasta sauce.

Take polenta out of oven, top w/ sausage/sauce. Top w/ mozzarella cheese. Put back into oven until brown.

OMG...So good!!! Perfect for pot luck/sick friend.

Wow that's deja vu my BIL & SIL made this for us for dinner last night! It was pretty good too!

FYI - I just had the leftovers for lunch and it reheated well. (its so good)

did you make the polenta or buy it made? i've NEVER made polenta and i love it.

If the nice people at the store are willing to do the work for me I let them: BOUGHT IT...and I used jarred sauce.

The only issue w/ the premade was there were holes on the bottom - I just took one slice and cut it into small pieces to fill the holes.

BIL used store bought too and cut smaller pieces to fill in the gaps.
