You could always use food. Have them fill in adjectives that descibe the food item. You could use sour patch kids or m&ms. HOw about a poem about winter? Using their 5 senses.

Re: Adjectives Lesson for 1st grade
I just did a lesson on character traits (using adjectives) last week. We have conferences on Tuesday, so I wanted to make something cute for the parents. So the kids drew a picture of their mothers or their caregiver and then wrote under it "My mommy is __________. My mommy is _____________." I taught it by putting my name on the board and having them describe me, then my para, then the principal, then a character in the book we are reading. Then we tried it where they wrote their adjective on a post it and I wrote a persons name on the board and they came up and stuck their adjective on the board and I read them out loud.
They came out so cute, and I figured since its Women's Month, describing their mothers would be fitting.
HTH!
