What would you serve along side shrimp Scampi?
I'm thinking an orzo or rice?
Any recipes???
I was going to serve asparagus as the veggie.

I've always served it over pasta with a side salad.

I normally would too....But my mom & step dad are type 2 diabetic & really shouldn't have a big old pile of pasta (even though I'd love it)...so I was hoping for something I can serve as a side. I make my scampi in pretty individual casserole trays with about 10 shrimp each

Have you tried Dreamfield's Pasta? It's low carb and actually pretty great in my opinion. I am diabetic. I usually give myself half a cup of this pasta as a side with shrimp scampi.
Orzo and rice also have a pretty heavy GI impact - so if you are looking to lessen that I'd go with a low carb pasta or maybe just serve it with some quinoa or salad and a little bread with no other carb.

I am aware of the pastas out...however, I feel like people (AKA my family) expect bigger portions & a small scoop of pasta I thought might look blah. But a nice orzo along side of the Scampi dish, & a veggie would look more balanced?
I guess I could just do a small portion of the side of the scampi too I'm so used to a big old bowl when I eat pasta 
ETA, maybe a linguini tossed with EVOO diced asparagus spears, garlic, dash of red pepper flakes? And put on the side of the plate would be nice...little grated parm cheese too?

Thank you all for the recs & brainstorming!
I think I'm going to serve my Scampi in the individual pretty casserole trays. Then I will do a linguini tossed with asparagus, EVOO & garlic & place a portion on the plate. This way I portion control everyone for them

I typically prefer shrimp over rice. Especially a scampi, since my stomach can't handle too much of that sauce. I like a simple rice to soak up some of the sauce. To me, rice pilaf and asparagus would be perfect!
