Cinco de Mayo- Ideas Please
Im not much of a cook but having a GTG at my house.
Any easy APPS or dinners I can make?
Im already doing chips and Salsa and guac. - Bean/taco dip. - Margaritas.

we are doing dips and tacos with all the fixings... and sangria and/or margaritas.
Maybe I will do so chicken and cheese quesadillas too!

You could also do a black bean corn salsa. What about the crockpot mexican chicken. I know some ladies on here have a recipe. I believe it's just chicken breast and a jar of salsa poured over it and let it cook. What about fish tacos? Mexican cheese dip? Spanish Rice? Black beans and rice? Fajitas? Burritos?

Also shredded chicken taquitos!
An easy filling is chicken breast, jar of salsa, jar of beans , can of corn (both optional) spices. Cook in crockpot until shredded. Add sour cream or cream cheese. Yum!

Quesedillas are really easy :)
Love doing quesadillas.. especially because they are easy to 'customize'. You can do cheese, mushroom and spinach for non-meat eaters. You can do chorizo and cheese, chicken and cheese, etc..
I've done taco/burrito bars before and they are always a huge hit. Just make a couple of different fillings (shredded chicken and ground beef are good) - lay out warm crunchy shells and soft shells - and have a fixings bar ready with avocado, lime, cilantro, yellow rice, refried beans, sour cream, chopped chilis, raw onion, taco sauce, lettuce, tomato, salsa, etc..

I got all my ideas from Foodnetwork.com. They have a ton of super easy, delish recipes.
