Pioneer woman's Mexican lasagna is very tasty (but I'd half the recipe unless you want leftovers for a month).
I looove tequila lime chicken with pico de gallo!

Five Layer Mexican Dip
Ingredients 2 teaspoons olive oil 1 medium onion, diced 2 cloves garlic, minced 1 (15.5-ounce) can black beans, preferably low-sodium, drained and rinsed 1 tablespoon minced chipotle pepper in adobo 4 tablespoons lime juice 1/4 teaspoon ground cumin 1 tablespoon water 1/2 teaspoon salt 2 cups corn kernels (10-ounce box frozen corn) 1/4 cup chopped cilantro leaves 2 ripe avocados 4 medium tomatoes, seeded and diced (about 2 cups) 1/4 cup thinly sliced scallion 1 tablespoon finely diced jalapeno pepper, optional 3/4 cup shredded extra-sharp Cheddar
Directions Heat the oil in a skillet over medium-high heat. Add onions and cook until they soften, about 3 minutes. Stir in the garlic and cook for 2 minutes more.
Put half of the onion mixture into a food processor with the black beans, chipotle pepper, 2 tablespoons of the lime juice, cumin, water and salt. Puree until smooth. Set aside.
Add the corn to the skillet with the remaining onion mixture and cook for about 3 minutes. Remove from the heat and stir in the cilantro leaves.
In a small bowl mash the avocado with the remaining lime juice. In a medium bowl toss together the tomatoes, scallion and jalapeno, if using. Season tomato mixture with salt and pepper, to taste.
Spread the black bean dip into the bottom of an 8 by 8 glass baking or serving dish. Top with the corn mixture, spreading it out to form a single layer over the beans, repeat with the avocado, then the tomatoes. Top with cheese. Serve with baked chips.

Super Nachos
Ingredients 2 bags corn tortilla chips in 2 colors or different flavors, such as blue corn, red corn, yellow corn, lime flavored, chili flavored or black bean chips -- pick 2 favorites
Pico de Gallo Salsa: 4 vine ripe tomatoes, seeded and chopped 1 jalapeno pepper, seeded and finely chopped, for medium to hot heat level 1 small white onion, chopped 1/4 cup, 2 handfuls, cilantro leaves, finely chopped -- substitute parsley if cilantro is not to your liking Salt
Beef and Beans Topping: 1 tablespoon extra-virgin olive oil 1 pound ground sirloin 2 cloves garlic, chopped 1 small onion, chopped 1 jalapeno pepper, seeded and chopped 1 teaspoon salt 1 1/2 teaspoons dark chili powder 1 1/2 ground cumin, half a palmful 2 teaspoons to 1 tablespoon cayenne pepper sauce, giving you medium to hot heat level 1 can black beans, 15 ounces, drained
Cheese Sauce: 2 tablespoons butter 2 tablespoons all-purpose flour 2 cups milk 3/4 pound pepper jack cheese, shredded, about 2 1/2 cups
Additional toppings to choose from, optional: Sour cream Chopped scallions Chopped black olives Diced pimento Sliced avocado, dressed with lemon juice Hot pepper sauces Directions Arrange a mixture of 2 varieties of corn chips on a very large platter or use your broiler pan as a platter.
Combine salsa ingredients in a bowl and set aside for flavors to marry.
Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and saute 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt, chili powder, cumin and cayenne pepper sauce. Cook meat 5 minutes, then stir in beans and reduce heat to low.
In a medium sauce pot, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat.
Pour cheese sauce evenly over the massive spread of chips and top evenly with beef and beans and the pico de gallo. UBER NACHOS! Serve immediately as is or, garnish with your choice of extra toppings from the toppings list.

I make a mexican lasagna that's pretty tasty. Basically take a casserole dish and layer corn tortillas, tomatillo sauce, black beans sauteed with onion green peppers, mushrooms and chipolte in adobo (you could use chicken or skrit steak too) and cheese (I use pepper jack) bake at 350 for 30 min. Top with sour cream or guacamole and salsa.

I am making shrimp ceviche and some chicken dish with lime and orange juice and white wine (going to add a swig of tequilla for good measure too)
My mom is bringing over coconut shrimp layer dip, guacamole and some sort of cinnamon cream cheese dessert as well as rice pudding.
