Substitution Question
The recipe I'm using says to use grated ricotta salata, Asiago, or pecorino cheese. Can I substitute Romano instead of these three?
(It is a pasta/swiss chard dish that is being garnished with regular ricotta at the end if that makes any difference)

definitely... but to me pecorino and romano are the same.... the full name is pecorino romano!
