Soups
Please share your favorite soup recipes! I want to make a big pot so I can freeze it! So far I just have chicken soup so looking for more to freeze.
I love making soups in this weather!

Sure. I just made this over the weekend, so it's fresh in my mind.
Makes about 8 large servings:
-Take one stick of salted butter and melt it in a sauce pan. -Cut up 4 onions in slices and add them to the butter. Coat all the onions. Cook onions and butter for about 3-4 minutes on medium heat. -Add 2 bay leaves to the pan -Pour 8 cups of water into pan, mix ingredients together. -Add 6-8 boullion cubes-use more to taste later on in cooking process. -Bring to rolling boil, but then lower to low for the next 1-2 hours or until the onions are all cooked through. You can cover the soup only after you put it on low otherwise it will boil over and make a mess on your stove. -Add salt to taste. -20 minutes before serving, thicken slightly with a water/flour mixture. Stir into the onion soup, but don't make it too thick-you still want it to be watery. -Broil or toast slices of french bread, or seedless french bread with mozzarella cheese on top. Bread won't get as soggy if you make the bread a little stale first. -Top your bowl of soup with your bread and cheese and enjoy!

Some of my favs:
ST Escarole Soup with Turkey Meatballs (Italian Wedding Soup)...I use chicken instead of turkey
ST Spinach Tortellini en Brodo...I add pieces of chicken, carrots and celery and turn it into a chicken soup

Just made this soup yesterday, came out awesome but I used mild cheddar (I'm cheap ) and it would be much better with aged cheddar. I used a very large head of cauliflower, about 8 cups worth, and only 1 cup (8 oz) of shredded cheddar.
Roasted Cauliflower and Aged Cheddar Soup
Tonight I'm making this:
Spinach Tortellini in Brodo
I've made something similar before and I love it.

Some of my favorites are: Baked potato Broccoli and cheddar Escarole and white bean Lentil Beef barley Lemon chicken
I usually do 2-3 soups a week during the winter, since I can make them ahead and my kids love soup. I also make most of my soups "skinny" by subbing healthier things for part of the recipe.

That cheddar soup looks yum! Going to try it this week. Thanks for the tip to lighten it up and use less cheddar. Did you use cream or milk?

You can't really freeze this one. IF you wanted to, don't put the gnocchi in until you are ready to serve it.
Olive Garden Chicken and Gnocchi Soup – ala Copy Cat Recipes This is an easy to prepare recipe, but it is going to taste like you spent hours at the stove making your family a delightful chicken and potato gnocchi soup. You can find the gnocchi in a couple of different places in your supermarket, my local stores sells shelf stable potato gnocchi where dry pasta is sold. In higher end grocery stores I have seen this sold in the fresh sections where you would pick up a prepared meal at. Either type of gnocchi will work well. Yield: 8 servings. 1 cup chicken breasts, cooked and diced (you can use a rotisserie chicken) 4 tablespoons butter 4 tablespoons flour 1 quart half and half 1 14 ounce can chicken broth 1/2 cup celery, finely diced 2 garlic cloves, minced 1 cup carrots, finely shredded 1 cup onion, finely diced 1 cup fresh spinach, coarsely chopped 1 tablespoon extra virgin oil 1/2 teaspoon thyme 1/2 teaspoon parsley Freshly grated parmesan cheese – optional 1 pound potato gnocchi – can buy this in the gourmet section of many supermarkets Sauté the onion, celery, and garlic in the butter and olive oil, over medium heat when the onion becomes translucent, add the flour, and make a roux, let the butter and flour mixture cook for about a minute before adding 1 quart of half and half. Cook gnocchi according to package directions. Into the roux add in the carrots and chicken. Once the mixture becomes thick add the chicken broth. Once the mixture thickens again, add the cooked gnocchi, spinach, and seasonings, simmer until soup is heated through. Comments about this recipe: You can add more chicken if you like. While you could use left over cooked chicken breasts, I really think using the rotisserie chicken that are found in many grocery stores is the best way to get the optimal flavor of this soup. If you want to make the soup lower calorie you can use milk instead of half and half. Half and Half, does taste better, and it also reheats better than milk does.
Olive Garden Chicken and Gnocchi Soup – ala Me 3 small cans Cream of Chicken Soup 3 small cans of water 1 ½ - 2 pound diced cooked chicken 1 bag baby spinach 3 gloves garlic, grated ½ small onion, grated 1 package Gnocchi
Cook chicken in seasoned water. I like garlic powder, onion powder and a few shots of Tabasco.
Drain chicken. Add canned soup and 3 cans of water. Stir. Add chicken back. Grate garlic and onion into pot.
When heated, add spinach.
Start cooking Gnocchi to directions. My package said cook 2 minutes in boiling salted water. Mine were frozen, cooked about 3 minutes.
Add gnocchi to soup and serve.

I make an amazing Minnestrone (with turkey sausage) in the crock pot. You could do it meatless though if you wanted. It's not your typical Minnestrone. tons of different veges and beans. I'll see if I can find the recipe
