what to use in place of heavy cream for soups?
i want to try the PW carrot thyme soup but im not big on cream. I try not to have too much dairy since im lactose intolerant plus im not too keen on all that fat.
Any ideas? TIA

You can use whatever milk you have in the house, sour cream, half-n-half, plain greek yogurt. I'm sure if you use soy milk or something of the sort, you could substitute that too. You could also use evaporated milk. HTH!
The cream is just to add some creaminess to it, but I've used any of the above in a pinch.

You can use milk, but it won't be as thick. I generally opt for half and half.

i used greek yogurt instead. the soup was just eh, but i dont think it was for lack of cream. I feel like it was missing something. oh well!

I've seen Rachael Ray use a roux (flour and butter) mixture to thicken up chicken stock for some ingredients - not sure if it would work for soup.
