Talk to me about Quinoa

I found a turkey meatloaf/quinoa recipe that I cannot wait to try tomorrow. How else do you incorporation quinoa in your diet?

We actually made it for the first time the other night- it was a vegeterian recipe actaully.
And quite delish.
I have to find the recipe...basically it's all made in a skillet- you cook the Quinoa and then add a bunch of veges, avocado etc.
Let me see if I can find it.


OK this is it- the recipe printed online is not accurate- it doesn't follow the attached video- we went by this video. You have to get past the guy's voice Chat Icon- he's actually a good cook!

I make it with feta chunks and spinach or tomato.
You can stuff and bake it in tomatoes or peppers
I am eating it right this second mixed with left over boston market creamed spinach and it is heavenly.

Talk to me about Quinoa

I use it in place of rice or Pasta most of the time. i think it's really versatile. I'll make stirfry and throw it over the quinoa. mix with veggies as either a cold salad or keep it warm. It really absorbs the flavor of whatever you pair it with, so it's great like that.

Same here.

Just about anything I might do with rice, bulgar or cous-cous, I'll do with quinoa... pilafs, stir fries, tabouleh.

The only thing I'd stress is to RINSE IT thoroughly in cold water before you cook it. It can be very bitter if you do not rinse it well.

I use quinoa in place of rice and pasta for a lot of dishes. I also put a spoonful of it in my chili, so good.

My co-worker gave me this recipe for a Quinoa salad and it was soooooo good.

Ingredients:

- 1 cup quinoa (rinsed thoroughly under cool water for minimum of 3 mins)
- 2 cups stock of choice (you will likely need to add more liquid so have some on hand)
- 1 cup dried cranberries (or fruit of your choice)
- ½ cup slivered almonds, toasted
- ½ cup diced scallions, green only
- 1 tsp. honey
- 1 tsp. white balsamic
- 1 tsp. mustard
- Zest of half a lemon
- 1 tsp. lemon juice
- Olive oil
- Salt and pepper


Directions:

- Bring stock to boil on high heat. Once at a rolling boil, add in rinsed quinoa. Allow quinoa and stock to boil together for about a minute then reduce to a simmer.
- Add in ½ of the cranberries.
- Allow quinoa to cook, adding liquid as necessary. Should be tender after 20 minutes.
- In the meantime, combine honey, white balsamic, mustard, zest and lemon juice in a bowl and mix to combine. Slowly stream in oil emulsifying along the way.
o Note: best way to do this is to take about a tablespoon of oil and whisk in completely, then continue to add oil. If you don’t emulsify within the first tablespoon of oil, you’re unlikely to do so throughout the whole process.
o Rule of thumb: dressings are 3:1 oil to acid; since we have 2 tsp of acid this would require 6 tsp of oil, which is about 2 tablespoons. Because the honey and the white balsamic are sweeter, I find that I like the taste with less oil.
- Remove the quinoa from the stove and place in another bowl
- Stir in remaining cranberries, scallions and almonds. Toss with vinaigrette.
- Salt and pepper to taste
o Note: Do NOT salt your quinoa while cooking. This will make it tough.
- Serve warm or place in refrigerator for 30 minutes until chilled.
