Brussel Sprout recipe?
Anyone have any good ideas for Thanksgiving?

I love them just roasted with salt and pepper.. but if I want to be FANCY I will mince pancetta and cook it than lightly sautee the Brussels Sprouts LEAVES in a bit of the fat with the crisp pancetta. When you pull the sprouts apart so they are just leaves it looks pretty and it tastes less bitter.

I make them by roasting them in a little bit of oil, bacon (and drippings), and shallot. Once they are done, I add a sprinkle of lemon juice. I make sure they are a little crisp and brown. I quarter them also, so there are more parts to get browned.

I halve the sprouts and toss with a little bacon fat and olive oil salt & pepper. Roast cut side down at 400 degrees until browned and sprinkle chopped cooked bacon on top. Just actually finished prepping this for later!

I know you made them already, but here's another variation that I do. Slice them thin, so they fall apart and take on a shredded cabbage look. In a pan, melt a tablespoon of butter and sauté some chopped walnuts until they brown a bit. Then add the brussels sprouts and sauté for a few minutes. Turn off the heat, add a little kosher salt and chopped dried cranberries. Toss together and serve.
