Favorite winter soup?
I always make either a vegetable soup or butternut squash. I need something new, preferably meatless. What is your best or most favorite soup?

Favorite winter soup?
Olive Garden's Chicken Gnocchi soup - I found a copy kat verion but it was too long so I just use a few cans of cream of chicken soup, add some diced chicken, a bag of spinach, fresh grated garlic and cooked gnocchi.

Yes.. for meatless .. this if my favorite.
Another meatless favorite is a nice thick tomato based vegetable soup with alphabet noodles. I roast veggies and then puree a few of them to thicken the soup. My kids love it with grilled cheese.
I like a nice creamy broccoli/cheese or cauliflower/cheese soup too.
If we venture into meat territory...
I really love a thick, hearty New England Clam with big chunks of potatoes and some melty sweet leeks in a creamy broth with a generous amount of tender clams.
And .. of course.. Chicken with dumplings makes me swoon.

Red Lentil w/ cannelloni beans.
No recipe, but sauté up chopped up carrot, onion, celery until soft, add water, stock cube and red lentils, cook into Lentils are soft, add drained tin of beans, season enjoy!

I wish DH liked soup for dinner. Potato leek is my favorite meatless and hearty soup. Tomato with a side of grilled cheese is next.

I also love Beef Barley but you said meatless- I swear you can make it without the beef though- I usually pick out the chunks of beef anyway- I'm not a huge fan
I made a great Tuscan Vege soup last night- with beans and chickpeas.

Chicken and Dumplings when it is very cold/snowy out is the best.
Chicken meatball tortellini soup
Italian wedding soup with chicken meatballs and escarole, lots of parm on top
My mothers chicken soup or meat soup (with a splash of red wine vinegar)
