Christmas Day Menu?
I feel like I ask this every year...haha
Dinner is just 8 adults & my 2.5 year old DD (who will only eat pasta, so she doesn't count)
Menu is:
Antipasto (cheese, sausage, olives, etc) Roasted Shrimp Cocktail
Stuffed Rigatoni Chicken Parm Eggplant Parm (for my vegetarian sister)
Salad Stuffed Mushrooms
I'd like to make like 2 more veggie side dishes.
Ideas, please?

Christmas Day Menu?
Since your menu is on the Italian side with heavy sauces and breaded items I would do any vegetables tossed in light olive oil and garlic like broccoli or string beans.
What about stuffed artichokes?

Maybe roasted red potatoes and broccoli tossed in garlic and oil?
Another option for broccoli is grilling it with garlic and anchovies (not the actual anchovie, but the drippings from the can). I'm not an anchovie lover at all, but this gives the brocolli a slightly salty flavor (not fishy AT ALL). It's phenomenal.

Horseradish Crusted Prime Rib Twice baked Potatoes (although thinking of doing duchess potatoes this year) Honey glazed Carrots Roasted Asparagus
Pastries and cookies for dessert

We are 12 people and I'm doing a sitdown.
Sausage bread Spinach dip & crudite
Beef tenderloin with port wine truffle sauce twice baked potatoes green beans almondine maple glazed carrots PW rosemary rolls
Red velvet cake (probably, although I might do chocolate instead) Carrot cake
