Best appetizer recipe
roll out a thing of puff pastry into about a 12x12ish square. Cut into 12-16 equal squares (depending how big you want them), or use a 2.5-3" round cookie cutter and cut out circles. Use a small circle cookie cutter to score a circle in the center (leaving a 1/2"ish border). Bake at 400 for 12 minutes or until they are brown. Pop out the centers, leaving a cup (I usually need to re-cut the center outline with a paring knife). Fill with whatever you want - try goat cheese with some red pepper jelly or raspberry jam heated on the stove with some chili powder until it's thickened.
I made the cups for dessert tonight, filling it with lemon curd creme (jarred lemon curd mixed with marscapone, fresh lemon zest, ground ginger, and cardamom), and topped with some thickened blueberry jam. It looks great!

also, something easy and pretty - caprese skewers - get little skewers from party city or wherever, slide a grape/cherry tomato on there (or if you want to be extra fancy, roast the tomato first), then slide a mozzarella ball (bocconocini?) on there. Drizzle with a balsamic reduction, and sprinkle with basil

Extremely easy! You literally just throw everything into a bowl and mix it together - they bake for a total of 20 minutes.
The only change I made was that the recipe doesn't call for breadcrumbs but I added them for some binding.
