Post your best Thanksgiving recipe
I'm always looking for new recipes to try on Thanksgiving. This is the one I use for delicious pumpkin bread. Great to serve woith dinner or dessert! Just made a batch last night. Makes 2 loaves.
Ingredients:
·3 1/2 cups all-purpose flour ·2 teaspoons baking soda ·1 teaspoon baking powder ·3 teaspoons pumpkin pie spice ·1 teaspoon salt ·3 cups white sugar ·1 cup vegetable oil ·4 eggs ·1 (15 ounce) can pumpkin puree ·1/2 cup water
DIRECTIONS 1.Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans. Sift together the flour, baking soda, baking powder, salt, and pumpkin pie spice. Set aside.
2.In a large bowl, beat together sugar, oil, eggs, and pumpkin. Stir in flour mixture alternately with water. Divide batter evenly between the prepared pans. Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean. Wrap in plastic wrap to keep fresh.

Sweet potato souffle: (this kicks *ss - I don't even like sweet potatoes, and I LOVE it and make it every year!)
Ingredients: 2 cups sweet potatoes, mashed 3/4 cup sugar 4 egg whites 1/4 cup skim milk 2 tsp cornstarch 1/4 tsp cinnamon 1/4 tsp vanilla extract
For topping: 1/2 cup brown sugar 4 tbsp light butter 3 tbsp flour 1 8oz can crushed pineapple
Preheat oven to 350. Spray casserole dish with nonstick cooking spray. In a large bowl, using an electric mixer on low, beat together sweet potatoes & sugar. Add egg whites, milk, cornstarch, cinnamon and vanilla. Beat until fluffy and pour into casserole dish.
In a small microwave-safe bowl, combine butter and brown sugar. Microwave until melted. Stir in flour and pineapple, and drizzle over sweet potatoes.
Bake 30-35 minutes until bubbly and golden, serves about 8.

Homemade Macaroni and Cheese
This is the recipe that I use from the Betty Crocker cookbook. The only thing I do different is that I use paprika instead of ground mustard and I use both Cracker Barrel extra sharp cheddar and regular cheddar. It can be a pain to make, but it is so worth it! I also melt some extra cheddar on top for the last 5 minutes.
2 cups uncooked elbow macaroni (7 ounces) 1/4 cup butter or margarine 1/4 cup Gold Medal® all-purpose flour 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon ground mustard (I use paprika instead) 1/4 teaspoon Worcestershire sauce 2 cups milk 2 cups shredded or cubed Cheddar cheese (8 ounces)
1. Heat oven to 350ºF. 2. Cook macaroni as directed on package. 3. While macaroni is cooking, melt butter in 3-quart saucepan over low heat. Stir in flour, salt, pepper, mustard and Worcestershire sauce. Cook over medium low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese. Cook, stirring occasionally, until cheese is melted. 4. Drain macaroni. Gently stir macaroni into cheese sauce. Pour into ungreased 2-quart casserole. Bake uncovered 20 to 25 minutes or until bubbly.

1 can whole cranberry sauce 1 can crushed pineapple box frozen strawberries 1 cup walnuts 1 small box blackcherry jello
Melt cranberry sauce over stove top and cool. Drain both pineapple & strawberries Dizzolve Jello in 1 cup of boiling water. Mix everything together & chill overnight!

1 1/2 loaves cornbread 2 medium red onions, cut into 1-inch pieces 6 shallots (about 1/2 pound), cut lengthwise into sixths 5 leeks (about 1 pound), white and pale green parts only, halved lengthwise and cut crosswise into 1/2-inch thick pieces 3 celery ribs, chopped 1 cup packed fresh flat-leafed parsley leaves, chopped 1 tablespoon chopped fresh sage leaves 2 teaspoons chopped fresh thyme leaves 1 stick unsalted butter 3/4 pound vacuum-packed or canned whole chestnuts 3 1/2 cups chicken broth
Preheat oven to 325 degrees. Cut cornbread into 1/2-inch cubes and in 2 large shallow baking pans bake in middle of oven until just dry, about 20 minutes.
In a large heavy skillet cook red onions, shallots, leeks, celery, herbs with salt and pepper to taste in butter over moderate heat, stirring, until onion mixture is golden brown, softened, about 25 minutes.
If using canned chestnuts, rinse and drain. In a saucepan simmer vacuum-packed or canned chestnuts in 2 cups broth 15 minutes.
In a large bowl, toss together bread, onions, chestnut mixture, remaining 1 1/2 cups broth and salt and pepper to taste and cool completely. Stuffing may be made up to this point 1 day ahead and chilled, covered. Bring stuffing to room temperature before proceeding.
To cook all or part of stuffing outside poultry: In a shallow baking dish bake stuffing in preheated 325 degree oven 45 minutes (for moist stuffing, bake covered entire time; for less moist stuffing with a slightly crisp top, uncover halfway through baking time).

My friend had this recipe. We made it for a group Thanksgiving dinner a few years ago, and this dish received lots of compliments. I loved it.
From Real Simple:
Cider-Roasted Vegetables 1 1/2 pounds beets (1 bunch), peeled and cut into wedges 1 1/2 pounds parsnips, peeled and cut into 2-inch chunks 1 1/2 pounds baby carrots, peeled (or 1 1/2 pounds carrots cut into 2-inch chunks) 4 tablespoons brown sugar 4 tablespoons olive oil 2 tablespoons apple cider vinegar 1 pound shiitake or cremini mushrooms, cleaned and stemmed
Heat oven to 450º F. Place the vegetables in two small roasting pans. In a medium bowl, whisk together the brown sugar, oil, and vinegar. Pour over the vegetables and toss to coat well. Cook until tender, about 1 hour, stirring halfway. Add the mushrooms during the last 10 minutes, toss to coat well, and finish roasting. Season to taste with salt and freshly ground pepper.
Yield: 8 servings

It depends... sometimes it does and sometimes it doesnt... i just make sure I drain it really well- and I just used a regular bowl, not a mold in case it is a year that it doesnt set well enough...

this is my first post! I've been LIF shy, I post a lot on LIW. But I made this recipe for a dip party last week and every single person that attended has asked me for the recipe so I thought I'd share here as well
PUMPKIN DIP
INGREDIENTS 1 (16 ounce) container frozen whipped topping, thawed 1 (5 ounce) package instant vanilla pudding mix 1 (15 ounce) can solid pack pumpkin 1 teaspoon pumpkin pie spice
DIRECTIONS In a large bowl, mix together instant vanilla pudding mix, pumpkin and pumpkin pie spice. Fold in the thawed frozen whipped topping. Chill in the refrigerator until serving.
*I used an 8 oz container of cool whip and cut the recipe in half and it was still a lot of dip! Also, if you use libby's easy canned pumpkin, it has the seasoning already in it and you can omit the pumpkin pie spice. If you don't know what to serve this with, I served this with cinnamon graham crackers*

I have a great cranberry sauce one, I"ll have to find it and post it. (I never was a fan until I made this one)

Cranberry Walnut Relish
12 ounces fresh or frozen cranberries 3/4 cup white sugar 1 (12 ounce) jar orange marmalade 1 tablespoon lemon juice 3/4 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Place cranberries in a shallow 1 1/2 quart baking dish. Sprinkle with sugar, cover with foil and bake for 35 minutes. Remove from oven and sprinkle with walnuts. Re-cover and bake for 10 minutes. Remove from oven and stir in marmalade and lemon juice. Mix well. Cool to room temperature. Cover tightly and refrigerate at least 3 hours before serving.
I always make a double batch since it is so tasty!
Creamed Onions
2 tablespoons butter, softened 2 tablespoons all-purpose flour 1 cup milk salt and pepper to taste 20 ounces pearl onions (I use the frozen ones and just leave them out to defrost) 50 buttery round crackers, crumbled 2 tablespoons butter, softened
Preheat oven to 350 degrees F (175 degrees C). Prepare the sauce by whisking together and cooking the butter, flour, milk, salt and pepper. Cook until smooth. Place onions in a 2 quart casserole dish, pour in white sauce. In a saute pan, melt 2 tablespoons butter and toast cracker crumbs until golden. Sprinkle over onions. Bake 20 minutes or until steaming hot.

OMG...I made this last night and my family FLIPPED over it!!
YUMMY!!

I make this cranberry sauce recipe every year - it's easy and I love it!!
Make it the night before - needs to be refrigerated overnight!
20oz can of crushed pineapple 10oz can of mandarin oranges 1 bag of cranberries 1 box of Rasberry or Black Cherry Jello (any red Jello would be fine) Boil cranberries until the pop. Drain. Drain all canned fruit. Mix 1 cup of boiling water with jello. Mix completely. Pour over fruit and cranberries. Mix all together and put in refrigerator covered

Cranberry Orange Compote
1 12-oz. bag fresh or frozen cranberries (3 cups) 2 Tbsp grated orange peel 1-1/2 cups orange juice 1 cup granulated sugar, or to taste
In a heavy medium saucepan, combine cranberries, orange peel, juice and sugar. Simmer over medium heat, stirring occasionally, until cranberries soften, about 12 minutes. Remove from heat and cool overnight
I have to make it every year under penalty of death if I don't.

Cornbread Dressing
Cornbread, recipe follows 7 slices oven-dried white bread 1 sleeve saltine crackers 8 tablespoons butter 2 cups celery, chopped 1 large onion, chopped 7 cups chicken stock 1 teaspoon salt Freshly ground black pepper 1 teaspoon sage (optional) 1 tablespoon poultry seasoning (optional) 5 eggs, beaten
Preheat oven to 350 degrees F. In a large bowl, combine crumbled cornbread, dried white bread slices, and saltines; set aside. Melt the butter in a large skillet over medium heat. Add the celery and onion and cook until transparent, approximately 5 to 10 minutes. Pour the vegetable mixture over cornbread mixture. Add the stock, mix well, taste, and add salt, pepper to taste, sage, and poultry seasoning. Add beaten eggs and mix well. Reserve 2 heaping tablespoons of this mixture for the giblet gravy. Pour mixture into a greased pan and bake until dressing is cooked through, about 45 minutes. Serve with turkey as a side dish.
Cornbread: 1 cup self-rising cornmeal 1/2 cup self-rising flour 3/4 cup buttermilk 2 eggs 2 tablespoons vegetable oil Preheat oven to 350 degrees F. Combine all ingredients and mix well. Pour batter into a greased shallow baking dish. Bake for approximately 20 to 25 minutes. Remove from oven and let cool. To serve, cut into desired squares and serve with butter. Yield: 6 to 8 servings
