Need dinner idea for people coming over
DH and I are having another couple over on Sat night for dinner. I need an idea for dinner, preferable something I can throw in the oven to bake. Fish is out (DH) is allergic and we don't eat pork. Any recipes would be sppreciated Tia

I'm trying Ina Garten's company pot roast today. Could be an option! I'll let you know how it works out.

I recommend lasagna.
My only hesitation would be that a lot of people make this on Christmas, so hopefully they haven't had it recently.
I always use the no-boil noodles to make it easy.
I had the Queen of the Italian's over for dinner on Christmas and she raved about it.

Re: Need dinner idea for people coming over
- pot roast or roast beef with noodles or mashed potatoes and biscuits
- lasagna rollups with meatballs/sausage/ italian bread & salad and/or veggie
- turkey breast with roasted sweet potatoes, stuffing, green veggie
- Baked rigatoni with spinach (easy, yummy & different)

Re: Need dinner idea for people coming over
You can't really go wrong with chicken.
I'd do an herb roasted chicken with a sausage, mushroom and potato bread dressing. A nice side of honey glazed carrots and buttered peas served alongside a big winter salad with a cranberry vinaigrette will give a nice color and balance. A couple of bottles of Sauv Blanc (I like the cupcake whites.. very citrusy) and you have a great, filling meal.
If you want to go a little lighter... I'd do a lemon garlic roasted chicken breasts with whipped potatoes and steamed broccoli with a squeeze of lemon. If you want more of a one pot thing.. I'd say arroz con pollo and a salad with a a zesty cilantro lime dressing.
When I serve beef.. I just like doing steak. It isn't oven ready.. but I do all on the grill at the same time.. and it doesn't take long at all. I love good quality strip steaks with maitre d' butter, Caesar salad and baby carrots with butter. My favorite.
