Need pizza stone help!
I was so excited to get a pizza stone from King Arthur Flour for Christmas. Previously, I had made a sicilian-style pizza in my rectangular stoneware pan, but the crust ended up very thick and doughy. I was happy to finally make "real" pizza!
I'm doing something terribly wrong, though. The instructions for the stone said it did not need to be seasoned, so I didn't season it. I used a pizza dough recipe appropriate for the size of the stone. The first time I did it, I put the stone in the oven while it was preheating, like the recipe said. When I put the dough on the hot stone and began to roll it out, my gorgeous, elastic dough turned into a gelatinous mess that stuck to everything.
I scraped it all off and made a new batch of dough, same recipe. This time I didn't put the stone in the oven. The pizza rolled out beautifully onto the stone, I topped it with sauce and cheese and put it in the oven. After 20 minutes it was gorgeous!! But when I took it out, it was completely melded to the pizza stone. I could barely scrape it off. I honestly have no idea what I'm doing wrong here. I've made pizza before, I truly don't think it is me or my dough. I think it's the stone. I have it soaking right now and am praying that all the dough can be cleaned off of it.
Help me!! What am I doing wrong??

Did you put cornmeal on the stone under the dough? That's all I can think of.

I agree with PP.. if you aren't using cornmeal, you should consider giving it a try.
Also.. I make sure my dough is well floured AND I flour the peel too so it slides right off the peel onto the stone.
AND.. it does get easier after it's been used a few times.. so no matter what they say about not needing to season it.. I think the natural seasoning helps.

I used cornmeal under Italian bread a few times and it always smoked, which is why I didn't for pizza... you think that would help?

Yeah, I always put it, even if it smokes a little, it does prevent sticking.

The way this is written it sounds like you heated the stone, then put the dough ball on it to roll it out? Or am I reading this wrong? Because if that is what you did then that could explain what happen. It needs to be rolled out and placed on the stone, not rolled on the stone.

I roll it with my knuckles in the air and then place it on the pan but I think it is the same procedure for pizza stone. I am not sure if it different or not, but I put a little olive oil on my pan and nothing sticks.

I roll it out first, then place on stone. I also use cornmeal on the stone. Those are the only things I can think of that might be the problem.

I missed that you were rolling it onto the stone. Yes...roll it on the peel, while the stone is in the oven, and then slide it on a stone covered in cornmeal.

We always preheat the stone with the oven. Roll the dough out and put it on parchment paper. We don't use cornmeal. And bake it on the paper. Plus we cook the dough for about 5 mins popping the bubbles with the fork the. Take it out and top it and bake again until cheese is melted.

This is what we do, since we had some difficulty getting it off the peel. roll it and top it on the parchment.

Yes, I rolled it out onto the pizza stone! Is that not the right thing to do?
If you roll it onto the stone, it will get all messed up and start to cook before you want it to.

I always brush a light coat of olive oil onto the stone too.

Zullily has pizza stones right now from pizzacraft. They seemed like a pretty decent price.

Its a big wood or particle board thing with a handle, that you make the pizza on and use to slide on the hot stone.
