What should I make for dinner?

I have four bell peppers (green and red), white mushrooms and 1 1/2lbs of chop meat.

I already made meatloaf last night and think stuffed peppers would be too similarChat Icon

I know you think too similar but I don't think the flavors will match meatloaf at all!

You can do an "American Ghoulash" type thing.

I chop up a large onion and mince about 5 cloves of garlic. Toss in a large wok or sautee pan with a little olive oil until onions have softened just a little (about a minute). Add a package of ground turkey or some ground beef and brown - breaking up with spatula or spoon as you go. Chop up 2 zucchini, a yellow squash and peppers into medium sized chunks. Slice a carrot into thin circles or matchsticks. Throw all veggies into browned meat mixture. If you have good in season tomatoes add about 2 cups of chopped tomatoes. If not add 1 16 oz can of diced tomatoes or whole plum tomatoes with juice. If you need more liquid add a small can of plain tomato sauce. Give a good stir and cover for about 10 minutes so veggies can soften. For my kids I will often chop up 2 string cheese sticks and throw them in and stir - let them get melty for about 3 minutes before serving. Serve on a bed of whole wheat noodles. You can add freshly grated parmesan or romano if you want.

You could also do a chili with chopped peppers in it.

You could do tacos or taco salads and save the peppers to make roasted vegetables for another day.
