Anyone have a good homemade frosting recipe for cupcakes?

The canned ones can be gross sometimes.
I'm making cupcakes for palm sunday...was thinking of making my own frosting...looking for something not too too sweet either.

Any recipes?

I always do homemade frosting, even when doing a cake mix cake. I think it tastes so much better (less sweet AND less chemical-ish).

What type of cupcakes are you making? What type of frosting are you looking for?

Basic buttercream is easy to make - usually just softened butter, confectioner's sugar, a little liquid, and vanilla flavoring (or whatever flavoring you want).

Cream cheese frosting is the same, only you add cream cheese with the butter.

Basic Buttercream:

8 tablespoons (1 stick) of unsalted butter at room temp
3 3/4 cups confectioner's sugar, sifted
3 to 4 tablespoons milk
2 teaspoons pure vanilla extract

Beat the butter in an electric mixer until fluffy. Add sugar, 3 TB milk, and vanilla. Mix on low until sugar is incorporated and then beat on medium speed until fluffy. If frosting is too stiff, then add another TB of milk.

You can always cut the sugar a bit if you don't want it too sweet.

Cream Cheese Frosting:

8 oz cream cheese at room temp
8 oz unsalted butter at room temp
3 3/4 cups of confectioner's sugar, sifted
1 tsp pure vanilla extract

Mix cream cheese and butter together in an electric mixer until blended. Mix in sugar a little at a time, until well incorporated. Add vanilla extract, then increase speed to medium and beat until fluffy.

Of course, there are endless variations - chocolate, orange, lemon, mint... Hope this helps!

Those buttercream and cream cheese recipes are great! Especially buttercream since it's SO versatile. You can pretty much make it any flavor you want, depending on what you add... caramel, mint, fruit, etc.

Another basic is chocolate... personally I swear by the recipe on the back of the Hershey's Cocoa Box! There's also a cake recipe on there, too, and it's delicious.

I've made Nutella buttercream frosting before. Yummy! I used a basic devil's food box cake for the cupcakes then made the frosting from this recipe...
