Stuffed pepper recipe- quick question

Do you boil the peppers before baking them or no?

I do not. I do put them in the oven for a few minutes to soften just a little.. but I don't like mushy peppers. And boiling can ruin nutritional content even more than baking.

I microwave them with a little water in a dish to soften them a bit. I actaully like them softer, I hate when they have too much crunch.

I don't boil. this is the recipe i use. i got this from the Rice a Roni Spanish Rice box. So easy & so good. Makes great leftovers.

California Stuffed Green Peppers

Preparation Time: 10 Minutes
Cook Time: 35 Minutes
Time to Table: 45 Minutes
Servings: 6

3 large green bell peppers
1 (15-ounce) can tomato sauce, divided *
1 (6.8-ounce) package RICE-A-RONI® Spanish Rice
1 pound ground beef**
1 large egg

• Cut each bell pepper in half lengthwise; remove seeds and stems. Set aside.
• In large bowl, combine 1 cup tomato sauce, rice-vermicelli mix, Special Seasonings, ground beef and egg. Stuff pepper halves evenly with beef mixture.
• In large skillet, arrange pepper halves meat-side down. Pour remaining tomato sauce and 1-1/2 cups water evenly over peppers. Bring to a boil; reduce heat to medium. Cover; simmer 35 minutes or until meat is done and rice is tender. (I usually use more than 1 lb of meat and overstuff the peppers, so I usually cook for 45-50 min.)

Serve peppers with remaining tomato sauce mixture from skillet.

*I usually use a large can of tomato sauce or crushed tomatoes. I just take what's left over (after you take out the 1 cup for the meat) and add it to the 1 1/2 cups of water that you pour over the peppers. I like a lot of extra sauce.

**You can also substitute meatloaf mix for the beef. I actually like it better. The filling tastes more like meatballs.
