Will you share your stuffed pepper recipe ?
I've never made them before and I'm hosting Thanksgiving. Thought it would make a nice side dish.

I've only made these once and I just winged it, but I will say that I served it as the main dish. It was way too filling for a side dish.

That was might thought - main dish.
I just use my regular meatloaf mix/recipe, stuff them in the pepper. Put a slice of onion on top. Then fill the dish with Hunts pasta sauce. This is the only time I use that brand - not sure if it was b/c its a good size or it was onsale - -
FYI - I learned the hard way, if the recipe calls for rice, they usually mean COOKED rice (there was a crunchy rice episode).

I brown 99% fat free ground turkey in a pan with onions and a lil EVOO fresh garlic and some a lil chicken stock then i add mushrooms and peas to the mix and some red sauce and bread crumbs ,,, i put that mixture into a red pepper and bake scoating the pepper and inside with a little butter

just made these the other day for the first time i used the recipe on SKINNYTASTE.COM they came out really good...i would post the linj but not sure how to do that...lol

Prepare rice using 2 cups of beef broth and 1 cup of rice. Cook and set aside. Sautee onion and garlic with olive oil and a little salt and pepper. Add ground turkey and brown. Add a little beef base (kind of a boullion paste). Throw in some worcestershire sauce. Add small can of tomato sauce (plain). Stir in frozen peas and the rice. Add a generous handful of Gruyere. This is your stuffing.
Cut off tops of peppers. Remove seeds and clean. Put peppers in a baking dish with a small amount of tomato sauce in the bottom and cook (empty) for a few minutes. More time if you like them really soft. Remove peppers from oven and stuff with turkey mixture. Top with plain tomato sauce and some Shredded Gruyere and Mozzarella. Put in the oven and bake until cheese is melted and peppers are heated through.
I agree that it's WAY too much for a side dish though. I serve it as a main entree with a salad side.

I use this recipe as a basic guideline. It is a little bland so I add in some spices, garlic, onion, and hot sauce.

This is my own recipe I made as I went....
6 bell peppers of varying colors cut off tops and deseed and set aside. Cut off a bit of the end so it sits flat and place in a baking dish ( I don't parboil because I like a crisper pepper)
Brown 1lb itallian sausage in a pan Make 2 cups regular not instant rice in a seperate pan
Once rice is done and sausage is cooked combine and add 28oz diced tomatoes and 14oz tomato sauce. Grate in fresh parm reg
Mix and fill peppers
Bake at 350 for 45 min.
Sooooooo freaking good

DH is on a "slow-carb" kick, so I'm actually going to be trying this one tonight:
Servings: 4-6
6 green bell peppers 1 lb ground beef 1/2 cup onion, chopped 1 tablespoon garlic, minced 1 egg, whisked 1/2 cup breadcrumbs 1 tablespoon parmesan cheese 1 teaspoon salt 1 teaspoon ground pepper 1 teaspoon red pepper flakes (optional) 1/2 teaspoon oregano 1/4 teaspoon parsley
Quick Tomato Sauce Topping
1 cup tomato sauce 1/4 cup water 1 tablespoon brown sugar 1 tablespoon vinegar 1 teaspoon prepared mustard 1 teaspoon Worcestershire sauce 1/4 teaspoon oregano, dried 1/4 teaspoon basil, dried 1/4 teaspoon garlic powder 1/4 teaspoon parsley flakes 1/4 teaspoon salt 1/4 teaspoon pepper
Directions:
1 Preheat oven 350 degrees. 2 Lightly spray baking pan with cooking spray. 3 Blanch peppers in boiling, salted, water 5 minutes. 4 Briefly, and lightly, hand mix ground beef mixture, adding all ingredients from ground beef to parsley, except tomato sauce topping. 5 With a tablespoon, stuff each pepper with meat mixture. 6 Mix ingredients of tomato sauce and spices, or use any tomato sauce of your choice. 7 Place 2 tablespoons of tomato sauce in baking pan covering bottom. (This will be a small amount of covering). 8 Add meat stuffed peppers to dish. 9 Drizzle tomato sauce over top of stuffed peppers. 10 Add optional 1 piece of bacon to top of each pepper. 11 Bake at 350 degrees for 50-60 minutes. 12 When serving, dish out tomato "gravy" to top of each pepper.
