vegan baking... share your tips and tricks
i'm working really hard to be vegan... at this point, i would say that i'm about 85-90% vegan. i have the occasional piece of cheese and the even more occasional egg.
i already use chia seeds as an egg substitute in brownies and pancakes, but i don't love the consistency of the pancakes. they feel as if they were undercooked.
also, i've read about subbing butter with avocado in baking... specifically, cookies. i just haven't had a moment to try it. let's face it avocados don't last long enough in my house to me to use for baking.
what recipes have you tried and had success with??

I try to find vegan recipes so I don't have to mess around with subbing too much. Very occasionally, I will sub Earth Balnace for butter, but only if it's a real treat like a bday or something.

Not sure if you want muffin recipes, but these 2 are excellent
HH Apple Crisp Muffins
HH Blueberry Oatmeal Muffins (I used the juice and zest of one lemon in place of the cinnamon and vanilla)

I have bought egg substitute at WF. I have also used black beans in brownies and apple sauce in cakes. Post punk kitchen has some good baking recipes. I love the pumpkin brownies.

I'm vegetarian but I make lots of vegan recipes. I think your best bet is to follow the recipes on vegan blogs. They usually have a good sense of what substitutions work best. Here are some good ones:

I use coconut oil for butter or the earth balance coocnut butter
I use unsweeten apple sause for eggs in baking

usually you can't swap that easily- but if you are making the committment to be vegan- gluten free should be a given
my doctor told me eating gluten while being vegan is like putting the brakes on when you are trying to go forward-

Interesting. Does he feel gluten is inflammatory?
