What are your weekly dinner staples?
trying to get some new ideas.
lately i try to make sure these are in a regular rotation although some items i will do once a week and others once every week and a half - 2 weks.
Rice, beans, fried chicken shepherds pie buffalo chicken quinoa chicken pastellitos and rice and beans pot roast (in the crock pot) clam chowder
trying mexican stuffed shells tonight. have you tried any awesome & easy recipes lately?

What are your weekly dinner staples?
stir fries/fried rice with lot of veggies
i make "crunchy chicken" - it is a mix of any of breadcrumbs (regular or panko), crushed frenchs onions, crushed pretzels, mixed with dried herbs and spices. dip the chicken in something (standard egg wash, bbq sauce, etc), then press into breadcrumbs. bake on a cooling rack placed on a baking sheet (spray the chicken with pam) at 400 until done.
lasagna or baked ziti, or non-baked pasta (we really like broccoli and sausage with pasta in garlic and olive oil)
big salads with sliced grilled chicken, grilled fish, etc
i make a bbq pulled chicken in the crock that my husband loves, last time i made a double recipe so we have 2 dinners in the freezer.
eta: as a quick side, i often make a cucumber tomato salad - just sliced cucumbers, grape tomatoes, onion, white wine vinegar, and sweetener (usually agave or sugar)

kielbasa and pierogies---so easy to make
since the spring, the bbq is my best friend...turkey burgers, chicken, steak, hot dogs etc...we bbq at least 2x a week
turkey tacos (though we haven't had that in awhile)
baked ravioli we subsitute in every couple of weeks

Salsa chicken. Dump chicken thighs, salsa (enough to cover chicken) and taco seasoning (to taste) to pot. Cover and simmer for 40 minutes. At the end, shred and add cream cheese or sour cream. Serve in tortillas or on rice. Yum!
You can also add chicken stock if you want more sauce.

At this point i BBQ alot but i usually make
Tacos Chicken Brushetta- chicken cutlets topped with bushetta in the oven, i serve over macroni with oil Chessy Chicken and Broccoli Stir Fry

DH get tired of the same thing over and over again so usually it takes more than 2 weeks for me to repeat a dish but some of the repeats are: Tacos Meatloaf Thin cut beef with onions and pepper pasta with meat sauce pork chops some type of fish Shrimp Chicken breast

DH works some nights so usually I dont cook those days, I will just have leftovers.
my usual staples are: chicken cutlets turkey meatloaf home made pizza ravioli kielbasa and sauerkraut
occasionally i make baked ziti chili tacos stuffed peppers pulled pork in the crock pot
southwest stuffed peppers are a favorite in my house. I got the recipe from the blog below but substituted some of my own ingredients.

Things I make often are- Baked chicken cutlets w/ rice and beans Pretzel chicken cutlets (honey mustard instead of egg and pretzel instead of breadcrumbs) Stirfry either chicken or steak w/ peppers and mushrooms over rice Bubba Turkey Burgers Crock pot shredded chicken- and then into pot pie, buffalo mac and cheese, Mexican eggrolls Taco salad- ground turkey, taco seasoning, other toppings i.e. salsa and guac Pork chops in the slow cooker with sauerkraut and gravy over potatoes Apple and onion meatballs Whole seasoned chicken in crock pot

Chicken & vegetable stir fry Turkey tacos Meatloaf Meatballs Broiled tilapia w veggies Pesto chicken Homemade French onion pizza Shrimp scampi Asian lettuce wraps (beef or turkey) Pot roast in crockpot w veggies Rotisserie chicken from supermarket (great for leftovers) Taco salad
I can't wait to start BBQing so DH can start cooking some nights!

* veggie stir fry over brown rice
* quick and spicy tomato soup (giada de laurentiis recipe)
* pasta and marinara
* lentil tacos or burritos
* beans and rice
* hummus/grilled veggies burritos/wraps with a salad
* chana masala and rice with a salad
* tofu in peanut sauce with rice
even if i didn't mention a salad, many of these meals are served with a salad

Would you share the recipes? Sounds soooo good - and healthy. I am trying to find more meatless dishes since being told by all of my doctors to cut out red meats - beef, lamb, pork - as they contain nutrients that might stimulate any cancer cells left in me after treatment ... and I don't need that!
How do you hold lentils together in a taco?

salmon with some cumin, salt and pepper, pan fried, with quinoa and a veggie
chicken cutlets with lemon pepper panko, ww pasta with vodka sauce or pesto to go with.
black bean burgers with some sort of alexia fries.
steak tacos-marinate flank steak in lime, grill and slice, with cilantro, onions and avocado.
romaine lettuce salad with black beans, corn, shredded cheddar cheese and tortilla strips, either with avocado or chicken.
quick "hamburger helper"-ground chicken with cumin, onion and garlic powder, with one box of Annie's shells and cheese and half a can of crushed tomatoes, with some organic shredded cheddar on top.
quinoa stuffed peppers
veggie stir-fry with brown rice

as of last july, i have reduced almost all of the animal products i eat. very rarely will i have a bit of cheese, and even more rarely i have a couple of eggs.
i feel so much healthier since i started eating this way!!
the men of the family, my son and my significant other, still eat meat but only when we go out to eat.
since we stopped buying meat, cheese, eggs, milk, etc... we also have saved a lot of money on our food budget!

How do you hold lentils together in a taco?
tasty lentil tacos
things i've changed on the recipe: add a bit of salt and cook the lentils (once covered) almost twice as long, otherwise they're a little undercooked. they hold together pretty well if you let them sit uncovered for a little bit and let some of the moisture evaporate. we also have this with white rice and a salad
chana masala
i always have to double this recipe. the men-folk love this! this is extra yummy the next day, after all the flavors have been given more time to blend.
cuban black beans ingredients: 1 16oz bag dried black beans 1 green bell pepper 1 medium onion 5 garlic cloves 1/4 cup olive oil 1 cup white wine (cooking wine will do) 1/2 tsp ground cumin 1/2 tsp oregano 2 envelopes Sasson (Goya brand) (can be found in the ethnic aisle) 1 Tbs Adobo seasoning (also in the ethnic aisle) 5 cups water (give or take a bit) salt and pepper to taste
clean beans.
put beans in large pot with water over low/medium heat. to soften beans faster, keep the lid on. you can also do this in a pressure cooker (which i don't know how to use)
once beans are soft... my mother has taught me to take one out and squish it, if it looks like mashed potatoes on the inside, they're done softening.
chop onion, bell pepper, and garlic. in a blender combine onion, bell pepper, garlic and white wine. blend until pureed. add blender mixture to beans. add all other ingredients. add salt and pepper to taste.
if you've covered the beans, leave uncovered now and increase heat to medium. at this point you want the "sauce" to thicken. once it's as thick as you would like. serve over white rice.

Breaded baked chicken Whole roast chicken Pasta with meat sauce or sausage Chicken Chili Grilled Sausage Burgers (turkey, beef, or sausage) Meatloaf Tacos or taco casserole type dishes
I really don't cook the same meals more than once a month or so. I do freeze a lot of leftovers so that has us eating the same meals enough that I don't want to cook anything too frequently.
For sides, I do a lot of rice pilaf (Near east brand), green salad, GG frozen green beans with almonds, steamed broccoli. Although everything changes once summer hits!

broccoli and garlic stir fry steamed broccoli mixed veggies peas corn carrots and apricots squash, crasins, spinach and onions creamed spinach

chicken soup with spinach & mushrooms
grilled or baked chicken with a side of steamed cauli, broc, sweet potato or squash
sautéed chicken & brussel sprouts with garlic
sautéed garlic & almonds over chicken & spinach
beef stew - includes beef & anyveg i can find in the fridge
baked cheesy turkey or groundbeef balls with spinach & rice mixed in
cream of celery soup
red onion, feta, tomato & spinach on anything, but especially tilapia

it is, I guess. I was raised to have some sort of starch in every meal. It's a hard habit to break. BUT this is one meal of the day not like we eat each of these meals back to back.
